Course Outline

Day 1: Introduction to Poultry Health Management

Objectives:

• Recognize common poultry diseases and their signs.
• Explain the role of vaccination in disease prevention.

• Overview of poultry industry in South Africa
• Economic impact of disease outbreaks
• Biosecurity concepts: isolation, traffic control, sanitation
• Classification of poultry diseases (viral, bacterial, parasitic)
• Recognizing healthy vs. sick birds
• Importance of record keeping

Day 2: Anatomy and Physiology of Poultry

Objectives:
• Describe the basic anatomy of poultry.
• Understand the digestive, respiratory, and immune systems.
• Relate anatomy to disease susceptibility.
• Identify normal physiological parameters.

Topics:
• External anatomy: comb, wattles, feathers, legs
• Skeletal and muscular systems
• Digestive system: crop, proventriculus, gizzard
• Respiratory system: air sacs, lungs
• Immune system: bursa of Fabricius, thymus
• Normal vital signs: temperature, heart rate, respiration

Day 3: Disease Prevention through Biosecurity

Objectives:
• Implement biosecurity protocols on a poultry farm.
• Design a biosecurity plan.
• Apply disinfection and sanitation techniques.
• Manage visitor and vehicle access.

• Principles of biosecurity: exclusion, containment, hygiene
• Farm layout and zoning (clean vs. dirty areas)
• Disinfectants: types, concentrations, application
• Footbaths, shower-in/shower-out procedures
• Equipment cleaning and maintenance
• Rodent and pest control
• Record keeping for biosecurity audits

Day 4: Vaccination and Immunisation Programs

Objectives:
• Understand different vaccine types and routes.
• Design a vaccination schedule for broilers and layers.
• Administer vaccines correctly.
• Monitor vaccine efficacy and adverse reactions.

• Live attenuated vs. inactivated vaccines
• Routes: drinking water, spray, eye drop, injection
• Vaccination equipment and calibration
• Cold chain management
• Vaccination schedules for common diseases (ND, IB, IBD)
• Assessing immune response: serology tests

Day 5: Common Poultry Diseases and Diagnosis

Objectives:
• Identify clinical signs of major poultry diseases.
• Perform basic post-mortem examination.
• Collect and submit samples for laboratory diagnosis.
• Differentiate between diseases with similar symptoms.

• Viral diseases: Newcastle, Avian Influenza, Infectious Bronchitis
• Bacterial diseases: Salmonellosis, E. coli, Mycoplasmosis
• Parasitic diseases: coccidiosis, worms
• Nutritional deficiencies and metabolic disorders
• Post-mortem technique: external exam, internal organ inspection

Day 6: Treatment and Medication Management

Objectives:
• Calculate correct dosages for medications.
• Administer treatments via water, feed, or injection.
• Understand withdrawal periods and drug residues.
• Implement treatment protocols for common diseases.

• Antibiotics, anticoccidials, and supportive therapy
• Routes of administration: water medication, in-feed, injectable
• Dosage calculations based on body weight and water consumption
• Withdrawal periods and food safety
• Record keeping for treatments
• Treating coccidiosis, respiratory infections, and enteritis
• Managing drug resistance

Day 7: Environmental Management and Housing

Objectives:
• Optimise housing conditions for bird health.
• Manage litter, ventilation, and lighting.
• Control temperature and humidity.
• Implement waste management practices.

• Housing types: open-sided, controlled environment
• Litter management: moisture, pH, ammonia control
• Ventilation systems: natural, mechanical, tunnel
• Temperature and humidity monitoring
• Lighting programs for broilers and layers
• Stocking density and space requirements
• Waste disposal: composting, incineration, rendering

Day 8: Nutrition and Feed Management for Health

Objectives:
• Understand nutrient requirements for different poultry stages.
• Formulate balanced rations.
• Identify feed-related diseases.
• Implement feed biosecurity measures.

• Energy, protein, vitamins, and minerals
• Feed ingredients and quality control
• Feed form: mash, pellets, crumbles
• Feed storage and mycotoxin prevention
• Nutritional diseases: fatty liver, rickets, perosis
• Feed additives: probiotics, enzymes, organic acids
• Water quality and its impact on health

Day 9: Integrated Health Management and Farm Biosecurity Audit

Objectives:
• Develop a comprehensive health management plan.
• Conduct a biosecurity audit.
• Apply problem-solving skills to disease outbreaks.
• Prepare for certification and compliance.

• Components of a health management plan
• Risk assessment and contingency planning
• Biosecurity audit checklist
• Case studies: outbreak investigation and response
• Record keeping for traceability
• Compliance with SAQA and animal health regulations
• Final assessment and course wrap-up

This course is made up of exercises and case studies delivered alongside the theory — no separate practical sessions are required to complete it.

Summatives

Each delegate is assessed continuously throughout the course and a final summative test at the end.

Daily Exercises — 30%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 30% to the final total.

Final Test — 70%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 70% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Daily Average 30% + Final Test 70%).
