• Describe the consequences of non-compliance with safety regulations.

• Common hazards in poultry processing: biological, chemical, physical, ergonomic.
• Introduction to personal protective equipment (PPE) and its correct use.
• Roles and responsibilities of employers, employees, and safety representatives.
• Incident reporting procedures and documentation requirements.

Day 2: Hazard Identification and Risk Assessment

Objectives:
• Conduct a basic hazard identification in a poultry processing setting.
• Apply risk assessment methodologies to prioritize hazards.
• Understand the hierarchy of controls.
• Document findings in a risk assessment report.
• Propose control measures for identified risks.

Topics:
• Step-by-step hazard identification process.
• Risk assessment matrices: likelihood vs. severity.
• Hierarchy of controls: elimination, substitution, engineering, administrative, PPE.
• Practical exercise: walk-through hazard identification in a simulated processing area.
• Recording and communicating risk assessment results.

Day 3: Personal Protective Equipment (PPE) and Hygiene Practices

Objectives:
• Select appropriate PPE for various tasks in poultry processing.
• Demonstrate correct donning, doffing, and maintenance of PPE.
• Understand hygiene protocols to prevent cross-contamination.
• Explain the importance of handwashing and sanitization.
• Identify signs of PPE wear and tear.

Day 4: Safe Handling of Equipment and Machinery

• Understand emergency stop procedures.

• Common machinery: conveyors, scalding tanks, pluckers, evisceration lines.
• Machine guarding and safety interlocks.
• Lockout/tagout (LOTO) steps for maintenance.
• Safe start-up and shut-down procedures.
• Responding to equipment malfunctions and alarms.

Day 5: Chemical Safety and Hazardous Substances

Objectives:
• Identify hazardous chemicals used in poultry processing.
• Read and interpret Safety Data Sheets (SDS).
• Apply safe handling, storage, and disposal procedures.
• Understand spill response and first aid for chemical exposure.
• Use correct labeling and signage.

• Understanding Safety Data Sheets (SDS) sections.
• Safe mixing, dilution, and application of chemicals.

Day 6: Fire Safety and Emergency Procedures

• Describe emergency evacuation routes and assembly points.
• Conduct a mock emergency drill.

• Types of fires: Class A, B, C, D, K.
• Fire extinguisher types and operation (PASS technique).
• Emergency evacuation plans and signage.
• Practical drill: fire evacuation and assembly.

Day 7: Ergonomics and Manual Handling

Objectives:
• Recognize ergonomic risk factors in poultry processing tasks.
• Apply safe manual handling techniques.
• Identify repetitive strain injury risks.
• Implement ergonomic improvements.
• Use mechanical aids correctly.

Topics:
• Ergonomic hazards: repetitive motions, awkward postures, forceful exertions.
• Safe lifting, carrying, pushing, and pulling techniques.
• Stretching exercises and micro-breaks.
• Mechanical aids: conveyors, lift tables, hoists.
• Workstation design adjustments to reduce strain.

Day 8: Biological Hazards and Biosecurity

Objectives:
• Identify biological hazards: bacteria, viruses, parasites.
• Understand transmission routes in poultry processing.
• Apply biosecurity measures to prevent contamination.
• Recognize symptoms of zoonotic diseases.
• Implement cleaning and disinfection protocols.

• Common pathogens: Salmonella, Campylobacter, Avian Influenza.
• Routes of infection: inhalation, ingestion, skin contact.
• Biosecurity zones and traffic control.
• Cleaning and disinfection schedules and methods.
• Personal health monitoring and reporting illness.

Day 9: Integrated Health and Safety Management and Assessment

Objectives:
• Develop a health and safety plan for a poultry processing shift.
• Conduct a full safety inspection.
• Complete incident reports accurately.
• Demonstrate continuous improvement in safety practices.
• Pass the final assessment.

Topics:
• Creating a daily safety checklist.
• Conducting a walk-through safety audit.
• Incident investigation and root cause analysis.
• Safety communication: toolbox talks and safety meetings.
• Final written and practical assessment.

No practicals for this training.

This course is made up of exercises and case studies delivered alongside the theory — no separate practical sessions are required to complete it.

Summatives

Each delegate is assessed continuously throughout the course and a final summative test at the end.

Daily Exercises — 30%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 30% to the final total.

Final Test — 70%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 70% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Daily Average 30% + Final Test 70%).
