Course Outline

Day 1: Introduction to Abattoir Hygiene and Meat Safety

Objectives:
• Understand the importance of abattoir hygiene and meat safety.
• Identify key legislation and standards governing abattoirs in South Africa.
• Recognize the role of the meat supply chain in public health.

Topics:
• Overview of abattoir operations and meat safety.
• Relevant South African legislation (Meat Safety Act, Animal Diseases Act).
• Introduction to HACCP principles.
• Roles and responsibilities of personnel.
• Basic microbiology of meat spoilage and pathogens.

Day 2: Abattoir Design and Workflow

Objectives:
• Describe principles of hygienic abattoir design.
• Explain the importance of workflow segregation.
• Identify critical control points in the slaughter process.

Topics:
• Layout and zoning: clean vs. dirty areas.
• Material and equipment selection for hygiene.
• Workflow from lairage to dispatch.
• Ventilation, drainage, and waste management.
• Design features to prevent cross-contamination.

Day 3: Pre-Slaughter Handling and Lairage Hygiene

Objectives:
• Explain the impact of animal welfare on meat quality.
• Describe lairage design and cleaning protocols.
• Identify signs of disease in live animals.

Topics:
• Animal welfare regulations and stress reduction.
• Lairage management: stocking density, resting periods.
• Ante-mortem inspection procedures.
• Cleaning and disinfection of lairage.
• Handling of sick or injured animals.

Day 4: Slaughter Process and Hygiene Practices

Objectives:
• Describe hygienic slaughter procedures.
• Identify contamination risks during slaughter.
• Implement corrective actions for hygiene breaches.

Topics:
• Stunning, bleeding, and dressing techniques.
• Hygiene during evisceration and carcass splitting.
• Prevention of fecal and ingesta contamination.
• Use of sterile equipment and personal hygiene.
• Temperature control and chilling requirements.

Day 5: Post-Mortem Inspection and Meat Classification

Objectives:
• Perform post-mortem inspection techniques.
• Identify pathological conditions in carcasses.
• Classify meat according to South African standards.

Topics:
• Post-mortem inspection of carcasses and offal.
• Common lesions and diseases (e.g., TB, cysticercosis).
• Disposition decisions: pass, condemn, or trim.
• Meat classification and grading.
• Documentation and traceability.

Day 6: Cleaning and Sanitation Programs

Objectives:
• Develop and implement cleaning schedules.
• Select appropriate cleaning agents and disinfectants.
• Verify cleaning effectiveness through swabbing.

Topics:
• Principles of cleaning and disinfection.
• Cleaning equipment and methods.
• Chemical safety and dilution ratios.
• Sanitation standard operating procedures (SSOPs).
• Microbiological monitoring and ATP testing.

Day 7: HACCP and Food Safety Management Systems

Objectives:
• Apply HACCP principles to abattoir processes.
• Identify critical control points (CCPs).
• Establish monitoring and verification procedures.

Topics:
• HACCP seven principles in detail.
• Hazard analysis: biological, chemical, physical.
• Determining CCPs and critical limits.
• Monitoring, corrective actions, and verification.
• Record keeping and documentation.

Day 8: Waste Management and Environmental Hygiene

Objectives:
• Describe waste disposal methods compliant with regulations.
• Implement pest control programs.
• Manage wastewater and solid waste.

Topics:
• Types of abattoir waste: condemned materials, blood, offal.
• Rendering and incineration options.
• Wastewater treatment and discharge standards.
• Integrated pest management.
• Environmental impact assessments.

Day 9: Regulatory Compliance and Audit Preparation

Objectives:
• Prepare for internal and external audits.
• Understand roles of regulatory bodies.
• Develop a continuous improvement plan.

Topics:
• Overview of South African Meat Safety Authority (SAMSA) requirements.
• Audit checklists and non-conformance management.
• Corrective and preventive actions (CAPA).
• Traceability and recall procedures.
• Developing a food safety culture.

Practicals

Overview

The practicals allow learners to apply theoretical knowledge in a simulated or real abattoir environment. Hands-on sessions cover ante-mortem inspection, hygienic slaughter procedures, cleaning verification, and HACCP documentation, ensuring competency in critical hygiene and safety tasks.

Practical Activities
  • Practical 1: Ante-Mortem Inspection and Lairage Hygiene — Learners conduct ante-mortem inspections on live animals, identify signs of disease, and practice cleaning and disinfection of lairage pens. (4h)
  • Practical 2: Hygienic Slaughter and Dressing Procedures — Under supervision, learners participate in the slaughter process, focusing on hygiene practices during bleeding, evisceration, and carcass dressing. (8h)
  • Practical 3: Post-Mortem Inspection and Meat Classification — Learners examine carcasses and offal for pathological conditions, make disposition decisions, and classify meat according to standards. (6h)
  • Practical 4: Cleaning Verification and HACCP Documentation — Learners perform cleaning verification using ATP swabbing, review HACCP records, and practice completing monitoring forms. (6h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
