Course Outline

Day 1: Introduction to Batch Pan Operations and Confectionery Science

Objectives:
• Understand the role of batch pans in confectionery production
• Identify key confectionery types and their production requirements
• Describe the basic principles of heat transfer and sugar crystallisation
• Recognise safety protocols and hygiene standards in a food processing environment
• Explain the importance of recipe formulation and ingredient quality

• Types of confectionery: hard candy, soft candy, fondant, caramel
• Batch pan design and components
• Heat transfer methods: conduction, convection, radiation
• Sugar chemistry: solubility, crystallisation, inversion
• Ingredient functions: sugar, glucose, acids, colours, flavours
• Food safety and hygiene in confectionery
• Personal protective equipment and workplace safety

Day 2: Batch Pan Equipment and Pre-Operational Checks

Objectives:
• Identify major components of a batch pan system
• Conduct pre-operational inspections and checks
• Understand steam and electrical systems for heating
• Perform cleaning and sanitisation procedures
• Troubleshoot common equipment issues

• Batch pan components: vessel, agitator, heating jacket, controls
• Pre-start checks: steam pressure, electrical supply, safety devices
• Cleaning procedures: CIP (clean-in-place) and manual methods
• Sanitisation standards for confectionery equipment
• Routine maintenance tasks: lubrication, seal inspection
• Common faults: scorching, uneven heating, agitator issues
• Calibration of temperature and pressure gauges

Day 3: Cooking Processes and Temperature Control

Objectives:
• Describe cooking stages for different confectionery types
• Monitor and control cooking temperature and time
• Adjust recipes for batch size and ambient conditions
• Recognise end-points using temperature, viscosity, and colour
• Apply corrective actions for off-spec batches

• Cooking curves for hard candy, soft candy, and fondant
• Using thermometers and refractometers
• Controlling heating rates and agitation
• Effect of altitude and humidity on cooking
• Recipe scaling and batch adjustments
• End-point determination: temperature, solids content, texture

Day 4: Ingredient Handling and Recipe Formulation

Objectives:
• Handle raw materials according to specifications
• Weigh and measure ingredients accurately
• Understand the role of glucose, invert sugar, and acids
• Formulate basic recipes for common confectionery products
• Manage ingredient substitutions and quality variations

• Weighing techniques and equipment calibration
• Sugar types and their properties
• Glucose syrup and invert sugar functions
• Acidulants and their effect on inversion
• Recipe formulation: calculating batch quantities
• Adjusting recipes for different product textures

Day 5: Quality Control and Batch Monitoring

Objectives:
• Conduct in-process quality checks
• Measure key parameters: moisture, pH, colour, viscosity
• Interpret test results and adjust process parameters
• Identify defects and their root causes
• Document batch records and traceability

• In-process testing: moisture content, pH, refractive index
• Colour measurement and visual inspection
• Viscosity and texture assessment
• Common defects: graining, stickiness, discolouration
• Root cause analysis for quality issues

Day 6: Advanced Techniques and Specialised Products

• Produce aerated confectionery using batch pans
• Understand continuous vs. batch processing
• Implement flavouring and colouring techniques
• Manage multiple batches and production scheduling
• Apply lean manufacturing principles

Day 7: Integration, Troubleshooting, and Assessment

• Conduct a full batch from start to finish
• Complete a practical assessment

Overview

Hands-on practical sessions are essential for learners to develop competence in operating batch pans, handling ingredients, and controlling cooking processes. Practicals reinforce theoretical knowledge through real equipment operation and problem-solving.

Practical Activities
  • Equipment Familiarisation and Pre-Operational Checks — Learners identify batch pan components, perform pre-start inspections, and execute cleaning and sanitisation procedures under supervision. (4h)
  • Cooking Process and Temperature Control — Learners cook a batch of hard candy from start to finish, monitoring temperature and adjusting heating rates to achieve target end-point. (6h)
  • Recipe Formulation and Ingredient Handling — Learners weigh and mix ingredients for a soft candy batch, following a recipe and adjusting for ingredient variations. (4h)
  • Quality Control Testing and Batch Monitoring — Learners perform in-process quality tests on a cooked batch, interpret results, and make process adjustments to meet specifications. (4h)
  • Integrated Production Run and Troubleshooting — Learners independently produce a batch of fondant, troubleshooting any issues that arise and completing all steps from formulation to final quality check. (6h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
