Course Outline

Day 1: Introduction to Paprika and Blending Fundamentals

Objectives:
• Understand the origin, varieties, and quality grades of paprika.
• Identify key chemical and physical properties affecting colour and flavour.
• Explain principles of blending for consistency and cost-efficiency.
• Recognise food safety and regulatory requirements (SAQA, SANS, PPECB).
• Apply basic sensory evaluation techniques.

• Paprika types: sweet, hot, smoked, and specialty.
• Quality parameters: ASTA colour value, moisture, particle size.
• Blending theory: ratio calculations, diluents, and carriers.
• Food safety: HACCP, allergen control, and traceability.
• Sensory attributes: colour, aroma, pungency, and mouthfeel.
• Equipment overview: mixers, mills, and sieves.
• Regulatory labelling: ingredient declarations and net mass.

Day 2: Raw Material Selection and Quality Control

Objectives:
• Evaluate raw paprika powders using standardised tests.
• Differentiate between single-origin and blended profiles.
• Implement incoming inspection protocols.
• Use colour measurement tools (HunterLab, spectrophotometer).
• Document quality data for batch traceability.

• Supplier auditing and certificates of analysis.
• Laboratory methods: moisture content, colour extraction.
• Colour measurement: L*a*b* values and ASTA 20.1.
• Particle size distribution and sieve analysis.

Day 3: Blending Formulation and Process Optimisation

Objectives:
• Design blends to meet target colour and flavour specifications.
• Calculate blend ratios using linear programming.
• Optimise blending sequences to minimise segregation.
• Troubleshoot common blending issues (dusting, clumping).
• Scale formulations from lab to production.

• Formulation design: target ASTA, pungency, and cost.
• Linear blending models and spreadsheet tools.
• Mixing order: pre-blending, step-wise addition.
• Equipment settings: ribbon blender, V-blender, tumbling.
• Anti-caking agents and flow aids (silica, tricalcium phosphate).
• Process validation: homogeneity and sampling plans.
• Scale-up factors and batch size adjustments.

Day 4: Quality Assurance, Shelf Life, and Packaging

Objectives:
• Establish QA checkpoints during blending and packaging.
• Conduct accelerated shelf-life testing.
• Select appropriate packaging materials for paprika blends.
• Implement metal detection and foreign body control.
• Prepare for third-party audits (BRC, FSSC 22000).

Topics:
• In-process testing: colour, moisture, pH.
• Shelf-life determination: Arrhenius model, real-time trials.
• Packaging options: foil laminates, PET jars, bulk bags.
• Oxygen and light barrier properties.
• Metal detection and X-ray inspection.

Day 5: Advanced Applications, Troubleshooting, and Practical Integration

Objectives:
• Apply blending techniques to customer-specific product briefs.
• Diagnose and resolve colour fading, flavour loss, or caking.
• Integrate blending with downstream processing (sauces, seasonings).
• Develop a continuous improvement plan for blending operations.
• Complete a practical blending project with peer review.

• Customer brief interpretation: target profile and constraints.
• Troubleshooting: colour shift, off-flavours, microbial spoilage.
• Blending for specialised products: spice mixes, marinades.
• Lean manufacturing: reducing waste and changeover time.
• Practical project: formulate, blend, test, and present.
• Peer review and feedback session.
• Final assessment and certification guidance.

This course is made up of exercises and case studies delivered alongside the theory — no separate practical sessions are required to complete it.

Summatives

Each delegate is assessed continuously throughout the course and a final summative test at the end.

Daily Exercises — 30%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 30% to the final total.

Final Test — 70%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 70% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Daily Average 30% + Final Test 70%).
