• Basic anatomy of target species (cattle, sheep, pigs)

• Bleeding techniques and carcass hygiene
• Standard operating procedures for slaughter lines
• Record-keeping and traceability requirements

Day 2: Practical Application and Advanced Welfare Assurance

Objectives:
• Demonstrate correct stunning and bleeding procedures under supervision
• Apply monitoring protocols to assess animal welfare during slaughter
• Identify and respond to signs of ineffective stunning or distress
• Evaluate compliance with animal welfare standards in a simulated abattoir environment
• Develop corrective action plans for welfare breaches

Overview

Practical sessions are essential for learners to develop proficiency in stunning and bleeding techniques, and to apply welfare monitoring protocols. These hands-on activities ensure that theoretical knowledge is translated into safe, humane slaughter practices.

Practical Activities

Stunning and Bleeding Techniques — Learners practice captive bolt and electrical stunning on simulation models, followed by correct sticking and bleeding procedures. (3h)
Welfare Monitoring and Incident Response — Learners conduct welfare assessments during simulated slaughter, identifying signs of stress or ineffective stunning and implementing corrective actions. (2h)
Abattoir Walk-through and Audit Simulation — Learners perform a simulated welfare audit of a mock abattoir, identifying non-compliances and recommending improvements. (1h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.
