Day 1: Introduction to Hygiene Principles and Regulatory Framework

Objectives:

• Identify key South African regulations and standards (e.g., R962, SAQA)
• Recognize the role of personal hygiene in food safety and HACCP
• Describe the consequences of poor hygiene practices

• Definition of personal hygiene and its impact on product safety
• Common hygiene failures and their consequences

Day 2: Microbiology of Poultry and Cross-Contamination

Objectives:
• Identify microorganisms associated with poultry (e.g., Salmonella, Campylobacter)
• Explain how cross-contamination occurs in abattoir environments
• Understand the role of humans as vectors of contamination
• Describe the importance of microbial control

Topics:
• Pathogenic bacteria in poultry: sources and risks
• Modes of transmission: direct and indirect contact
• Cross-contamination pathways (e.g., hands, clothing, equipment)
• Human microbiome and hygiene implications
• Case studies of contamination outbreaks

Day 3: Hand Hygiene – Techniques and Best Practices

Objectives:
• Demonstrate correct handwashing technique (duration, steps)
• Identify when and where hand hygiene is required
• Understand the role of hand sanitizers and their limitations
• Recognize signs of skin damage and its impact on hygiene

• Handwashing procedure: wet, soap, scrub (20 seconds), rinse, dry
• Hand hygiene stations: location and equipment
• Alcohol-based hand rubs vs. soap and water
• Glove use: indications, donning, doffing, and limitations
• Skin care: preventing dermatitis and infections

Day 4: Personal Protective Equipment (PPE) – Selection and Use

Objectives:
• Identify required PPE for different abattoir zones
• Demonstrate correct donning and doffing sequence
• Explain maintenance and disposal of PPE
• Recognize contamination risks from improper PPE use

Topics:
• PPE types: hairnets, beard covers, aprons, boots, gloves, earplugs
• Colour coding and zone-specific requirements
• Donning and doffing procedures to avoid contamination
• Cleaning and storage of reusable PPE
• Inspection and replacement of damaged PPE

Day 5: Gowning Procedures and Movement Protocols

Objectives:
• Describe gowning procedures for entry into high-risk areas
• Understand movement restrictions to prevent cross-contamination
• Implement protocols for entering and exiting production areas
• Identify critical control points related to personnel movement

Topics:
• Gowning room layout and flow (dirty to clean)
• Step-by-step gowning: boots, apron, hairnet, gloves
• Movement patterns: low-risk to high-risk zones
• Handwashing and sanitising upon entry
• Protocols for breaks, meals, and restroom visits

Day 6: Health and Fitness for Work – Exclusion Criteria

Objectives:
• Identify health conditions that exclude workers from abattoir duties
• Understand reporting procedures for illness or injury
• Recognize symptoms of foodborne illness in self and others
• Explain return-to-work requirements after illness

Topics:
• Exclusion criteria: diarrhoea, vomiting, fever, infected wounds
• Reporting illness to supervisor and medical screening
• Roles of occupational health nurse or clinic
• Return-to-work: medical clearance and documentation
• Personal hygiene practices for workers with minor cuts (waterproof dressings)

Day 7: Cleaning and Sanitation of Work Areas and Equipment

Objectives:
• Differentiate between cleaning and sanitising
• Describe cleaning procedures for personal tools and workstations
• Understand the role of cleaning schedules and records
• Identify chemical hazards and safe handling of cleaning agents

Topics:
• Cleaning vs. sanitising: definitions and purposes
• Daily, weekly, and deep cleaning schedules
• Cleaning of knives, hooks, and personal equipment
• Approved chemicals: concentrations, contact times, rinsing
• Safety data sheets (SDS) and personal protective equipment for cleaning

Day 8: Waste Management and Hygiene in Abattoir Zones

Objectives:
• Identify types of waste generated in poultry abattoirs
• Describe proper waste disposal procedures to prevent contamination
• Understand segregation of waste (e.g., offal, feathers, condemned products)
• Implement hygiene practices in waste handling areas

• Waste categories: organic, inorganic, hazardous, recyclable
• Colour-coded bins and disposal routes
• Handling and storage of condemned products
• Cleaning and disinfection of waste containers
• Personal hygiene when handling waste: gloves, aprons, handwashing

Day 9: Hygiene Monitoring and Verification

• Understand methods for monitoring hygiene (visual, ATP, microbiological)
• Interpret hygiene test results and corrective actions
• Maintain hygiene records and logs
• Participate in internal and external audits

• Visual inspections: checklists and frequency
• ATP swabbing: principles, sampling sites, interpretation
• Microbiological testing: contact plates, swabs, indicator organisms
• Corrective actions when hygiene limits are exceeded
• Record keeping: cleaning logs, test results, corrective actions

Day 10: Training and Communication in Hygiene Culture

Objectives:
• Explain the importance of ongoing hygiene training
• Demonstrate effective communication of hygiene expectations
• Identify barriers to hygiene compliance and how to address them
• Foster a culture of food safety among team members

• Induction and refresher training programs

Day 11: Practical Application – Simulated Abattoir Environment

• Demonstrate correct handwashing, gowning, and PPE use
• Perform cleaning and sanitising of workstation
• Apply movement protocols in a simulated setting
• Identify and correct hygiene breaches in real-time

• Hands-on practice: handwashing station, gowning sequence
• Simulated production line: entering, working, exiting
• Cleaning drill: workstation, tools, and surfaces
• Scenario-based breaches: mock contamination events
• Peer assessment and feedback

Day 12: Assessment, Review, and Certification

Objectives:
• Complete written and practical assessments
• Review key principles and address gaps
• Understand certification requirements and validity
• Develop a personal action plan for continuous improvement

• Written test: multiple choice, true/false, short answer
• Practical assessment: handwashing, gowning, cleaning
• Review of common mistakes and best practices
• Certification process and documentation
• Action planning: how to maintain hygiene standards post-training

This course is made up of exercises and case studies delivered alongside the theory — no separate practical sessions are required to complete it.

Summatives

Each delegate is assessed continuously throughout the course and a final summative test at the end.

Daily Exercises — 30%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 30% to the final total.

Final Test — 70%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 70% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Daily Average 30% + Final Test 70%).
