Day 2: Raw Juice Characteristics and Pre-treatment

Objectives:
• Analyse raw juice composition and variability
• Apply pre-treatment methods to improve clarification
• Understand the impact of fruit maturity and storage

• Raw juice composition: pectins, starches, proteins, polyphenols
• Variability due to fruit variety, maturity, and season
• Pre-treatment: enzymatic hydrolysis, heat treatment, pH adjustment
• Laboratory methods for pectin and starch testing

Day 3: Enzymatic Clarification Techniques

Objectives:
• Select appropriate enzymes for juice clarification
• Optimise enzyme dosage, temperature, and time
• Monitor enzyme activity and inactivation

Day 4: Fining Agents and Their Application

Day 5: Filtration Technologies – Part 1

• Understand filter media and their selection
• Operate and monitor a plate-and-frame filter

• Filter media: diatomaceous earth, membrane, cloth
• Plate-and-frame filter press: setup, operation, cleaning
• Pre-coating and body feed techniques

Day 6: Filtration Technologies – Part 2

Objectives:
• Operate cross-flow and membrane filtration systems
• Troubleshoot common filtration problems
• Calculate flux, recovery, and cleaning cycles

Overview

Hands-on practical sessions are essential for learners to apply theoretical knowledge to real juice clarification processes. Learners will operate filtration and centrifugation equipment, conduct enzyme and fining agent trials, and perform laboratory analyses to optimise juice clarity. These practicals ensure competency in equipment operation, process troubleshooting, and quality control.

Practical Activities
  • Enzyme and Fining Agent Trials — Learners conduct small-scale trials using different enzymes and fining agents on raw juice, measuring turbidity and colour to determine optimal dosages. (16h)
  • Filtration System Operation — Learners operate plate-and-frame and cross-flow filtration systems, including pre-coating, monitoring flux, and performing CIP. (16h)
  • Centrifugation and Sedimentation — Learners operate a disc stack centrifuge and sedimentation tank, adjusting feed rate and bowl speed to optimise clarity. (10h)
  • Quality Control Laboratory Tests — Learners perform standard quality tests on clarified juice, including turbidity, colour, suspended solids, and haze stability. (10h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
