Day 2: Principles of Crystallisation and Supersaturation

• Explain the theory of crystallisation in sugar solutions
• Define supersaturation and its measurement
• Describe factors affecting crystal growth and nucleation

• Solubility and saturation of sucrose
• Supersaturation ratio and its control
• Nucleation: spontaneous and seeding methods
• Crystal growth kinetics
• Impurities and their effects on crystallisation
• Overview of pan boiling cycles

Day 3: Vacuum Pan Equipment and Instrumentation

Objectives:
• Identify components of a vacuum pan system
• Understand the function of instrumentation for monitoring
• Explain the role of vacuum and steam in boiling

• Anatomy of a vacuum pan: calandria, downtake, sight glasses
• Vacuum system: ejectors, condensers, and barometric legs
• Steam supply and condensate removal
• Instrumentation: temperature, pressure, vacuum gauges, refractometers

Day 4: Pan Boiling Operations – Massecuite Preparation

Objectives:
• Describe the steps in preparing massecuite for boiling
• Calculate required quantities of syrup and seed
• Demonstrate understanding of footing preparation

• Seed preparation: slurry or magma
• Footing: initial charge and graining

Day 5: Boiling Techniques – A, B, and C Massecuites

• Differentiate between A, B, and C massecuite boiling strategies

Day 11: Integration, Assessment, and Certification

Overview

Practical sessions are essential for learners to develop hands-on skills in pan boiling operations. They provide supervised experience with equipment, process control, and quality analysis, ensuring competence in real-world scenarios.

Practical Activities
  • Practical 1: Vacuum Pan Equipment Walkthrough and Safety — Learners identify and locate all major components of a vacuum pan system, practice safety procedures, and perform pre-start checks. (8h)
  • Practical 2: Massecuite Preparation and Boiling — Under supervision, learners prepare footing, set up boiling parameters, and conduct a full boiling cycle for A-massecuite. (12h)
  • Practical 3: Process Control and Data Logging — Learners operate a simulated or actual DCS to control pan boiling parameters, log data, and respond to alarms. (8h)
  • Practical 4: Quality Testing and Troubleshooting — Learners take samples, perform quality tests, and diagnose common boiling problems with instructor guidance. (8h)
  • Practical 5: Integrated Boiling Exercise and Assessment — Learners independently plan and execute a complete boiling cycle from start to finish, followed by debrief. (4h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.
