Course Outline

Day 1: Introduction to Perishable Produce Export Inspection

Objectives:
• Understand the scope and importance of perishable produce export inspection in South Africa
• Identify key regulatory bodies and legislative frameworks governing export inspection
• Recognize the basic categories of perishable produce and their export requirements
• Describe the role of the inspector in ensuring compliance and food safety

Topics:
• Overview of the South African agricultural export industry
• Legislative framework: Agricultural Product Standards Act, Perishable Products Export Control Act
• Roles of PPECB, DAFF, and other regulatory bodies
• Categories of perishable produce: fruits, vegetables, cut flowers, meat, dairy
• Basic principles of food safety and quality assurance
• Introduction to inspection procedures and documentation

Day 2: Quality Standards and Inspection Criteria

Objectives:
• Explain the quality standards for major perishable export commodities
• Distinguish between grade classifications and defect tolerances
• Apply inspection criteria for visual, physical, and organoleptic assessments
• Understand the importance of temperature management and cold chain integrity

Topics:
• Quality standards for citrus, deciduous fruit, subtropical fruit, and table grapes
• Grade classifications: Class 1, Class 2, and export standards
• Defect identification: blemishes, decay, physiological disorders
• Inspection criteria: size, colour, firmness, maturity, and internal quality
• Organoleptic assessment: taste, aroma, and texture
• Cold chain principles: temperature monitoring, pre-cooling, and cold storage

Day 3: Inspection Procedures and Documentation

Objectives:
• Perform step-by-step inspection procedures for perishable produce
• Complete required inspection documentation and certificates accurately
• Identify non-compliance issues and determine appropriate corrective actions
• Understand the role of sampling plans and statistical quality control

Topics:
• Step-by-step inspection process: receiving, sampling, inspection, disposition
• Sampling plans: AQL, random sampling, and sample size determination
• Inspection documentation: inspection reports, certificates of conformity, export certificates
• Non-compliance handling: hold, reject, re-grade, or re-work
• Phytosanitary requirements and export certification
• Record keeping and traceability

Day 4: Practical Application and Integration

Objectives:
• Apply inspection skills in simulated real-world scenarios
• Integrate knowledge of standards, procedures, and cold chain management
• Demonstrate proficiency in completing inspection documentation
• Prepare for certification assessment under Unit Standard 252171

Topics:
• Simulated inspection exercises for various perishable commodities
• Role-play: inspector vs. exporter interactions
• Cold chain audit simulation
• Case studies: resolving inspection disputes
• Review of key concepts and assessment preparation
• Final assessment (written and practical)

Overview

Practical sessions are integral to this course, as learners must develop hands-on skills in inspecting perishable produce. These sessions allow learners to apply theoretical knowledge to real-world scenarios, including product sampling, defect identification, and documentation completion under supervision.

Practical Activities
  • Practical 1: Product Identification and Grading — Learners examine various perishable produce items (e.g., apples, oranges, grapes) and practice grading according to export standards. (4h)
  • Practical 2: Inspection Simulation — Learners conduct full inspections on simulated batches of produce, including sampling, defect assessment, and decision-making. (6h)
  • Practical 3: Cold Chain Monitoring and Documentation — Learners use temperature data loggers and record-keeping systems to monitor cold chain integrity and complete export documentation. (3h)
  • Practical 4: Integrated Assessment — Learners participate in a comprehensive practical assessment covering all inspection steps, from sampling to final certification. (3h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
