This course provides a comprehensive understanding of the history, ingredients, and processes involved in bread plant baking. Participants will gain the knowledge required to demonstrate competence in the bread baking industry, from raw material selection to final product evaluation.

Course Outline

Day 1: Foundations of Bread Plant Baking

Objectives:
• Understand the historical evolution of bread baking in South Africa.
• Identify and describe the function of key baking ingredients.
• Explain the role of mixing, fermentation, and proofing in bread production.
• Recognise different bread types and their process requirements.

Topics:
• History of bread baking: from ancient to modern plant bakeries.
• Overview of baking ingredients: flour, water, yeast, salt, and additives.
• Ingredient functions: gluten development, fermentation, and flavour.
• Basic bread-making processes: mixing, fermentation, knocking back, proofing.
• Types of bread: white, brown, wholewheat, rye, and specialty breads.
• Introduction to process control: temperature, time, and humidity.

Day 2: Advanced Processes and Practical Integration

Objectives:
• Describe advanced baking processes: continuous mixing, automated dividing, and moulding.
• Analyse process parameters affecting product quality.
• Apply troubleshooting techniques for common bread faults.
• Demonstrate understanding of quality control and food safety in a plant setting.

Topics:
• Advanced mixing methods: sponge-and-dough, straight dough, and no-time dough.
• Automated equipment: dividers, rounders, moulders, and provers.
• Oven types and baking profiles: deck, rack, and tunnel ovens.
• Bread faults: causes and corrective actions (e.g., poor volume, crust issues).
• Quality control: sensory evaluation, texture analysis, and shelf-life.
• Food safety: HACCP principles, allergen management, and hygiene practices.

Practicals

8 hours of practicals To be conducted online or on-campus or in-house
Overview

Learners apply theoretical knowledge in a simulated or actual plant bakery environment. They practise ingredient measurement, mixing, fermentation monitoring, dough handling, and oven operation, followed by evaluation of finished products.

Practical Activities
  • Ingredient Handling and Mixing — Learners weigh and combine ingredients for a standard white bread dough, using a spiral mixer to achieve correct gluten development. (2h)
  • Fermentation and Dough Processing — Learners monitor bulk fermentation, knock back dough, divide, round, and mould loaves, then place in proofing cabinets. (2h)
  • Baking and Quality Evaluation — Learners bake loaves in a deck oven, monitor internal temperature, and evaluate crust colour, volume, and crumb structure. (2h)
  • Troubleshooting and Process Adjustments — Given a dough with a known fault (e.g., over-fermentation), learners adjust process parameters and produce a corrected batch. (2h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
