Course Outline

Day 1: Bread Stacking and Storage Fundamentals

Objectives:
• Understand the principles of bread cooling, stacking, and storage in a semi-automated bakery.
• Identify types of bread racks, trays, and storage equipment used.
• Apply safe manual handling and hygiene practices during stacking.
• Describe the workflow from oven to storage area in a semi-automated line.
• Recognize quality indicators and common defects in stacked bread.

Topics:
• Overview of semi-automated bakery processes: baking, cooling, stacking, and storage.
• Bread cooling requirements: temperature, humidity, and time.
• Types of bread (loaves, rolls, specialty) and their stacking considerations.
• Equipment: cooling conveyors, spiral coolers, rack ovens, mobile racks, and automated stackers.
• Manual stacking techniques: layer patterns, spacing, and weight distribution.
• Hygiene and safety: personal protective equipment (PPE), clean-as-you-go, and hazard identification.
• Storage conditions: temperature, airflow, pest control, and shelf-life management.
• Quality checks: visual inspection, crumb firmness, and packaging readiness.

Overview

Learners engage in hands-on stacking and storage exercises using actual bread products and equipment. They practice manual stacking techniques, operate a semi-automated stacker, and perform quality checks under supervision.

Practical Activities
  • Manual Bread Stacking — Learners manually stack different bread types (loaves, rolls) onto trays and racks, applying correct layer patterns and spacing. (1h)
  • Semi-Automated Stacker Operation — Learners operate a semi-automated bread stacker, adjusting settings for bread type and monitoring the stacking process. (1h)
  • Storage and Quality Check — Learners place stacked bread into storage racks, monitor storage conditions, and perform a quality inspection.

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
