This course equips micro bakery operators with the skills to produce a range of chemically aerated flour confectionery products safely and consistently. Learners will gain practical knowledge of mixing, depositing, baking, and finishing products such as scones, muffins, and cakes, while adhering to food safety and hygiene standards in a small-scale production environment.

Course Outline

Day 1: Foundations of Chemically Aerated Flour Confectionery

Objectives:
• Understand the principles of chemical aeration and its role in confectionery.
• Identify and correctly use ingredients for chemically aerated batters.
• Demonstrate accurate scaling, mixing, and portioning techniques.
• Apply food safety and hygiene practices in a micro bakery setting.

Topics:
• Introduction to chemically aerated confectionery: types, characteristics, and market relevance.
• Chemical leavening agents: baking powder, baking soda, and acids; functions and selection.
• Key ingredients: flour, fats, sugars, eggs, liquids, and flavourings.
• Mixing methods: muffin method, creaming method, and all-in-one method.
• Batter consistency and portioning: scooping, piping, and depositing.
• Oven management: temperature, baking times, and testing for doneness.
• Common faults: tunnelling, sinking, uneven browning, and solutions.
• Food safety and hygiene: cleaning, cross-contamination prevention, and storage.

Day 2: Advanced Techniques and Product Development

Objectives:
• Produce a variety of chemically aerated confectionery items with consistent quality.
• Adapt recipes for dietary requirements and flavour variations.
• Apply finishing techniques such as glazing, filling, and decorating.
• Develop a product costing and pricing strategy for a micro bakery.

Topics:
• Advanced formulations: adjusting leavening for high-altitude, gluten-free, and vegan options.
• Flavour and texture enhancements: inclusions (fruit, nuts, chocolate), spices, and extracts.
• Specialised products: cupcakes, muffins, scones, and tea cakes.
• Finishing techniques: glazes, icings, fillings, and simple decorations.
• Quality control: assessing appearance, texture, and taste; troubleshooting.
• Scaling recipes for small-batch production.
• Costing and pricing: ingredient cost, overheads, and profit margin.
• Packaging and labelling for micro bakery sales.

Practicals

Overview

Hands-on practical sessions are integral to this course, allowing learners to apply theoretical knowledge in a real micro bakery environment. Learners will mix, bake, and finish a variety of chemically aerated confectionery items, developing critical skills in scaling, mixing, oven management, and quality control.

Practical Activities
  • Basic Muffin Production — Learners prepare two batches of muffins using different mixing methods (muffin method and creaming method) and assess the effects on texture. (3h)
  • Scones and Tea Cakes — Learners produce scones and tea cakes, focusing on achieving proper rise and crumb structure through correct handling of dough and batter. (2h)
  • Cupcake Decoration and Filling — Learners bake a batch of cupcakes, then practice piping buttercream, filling with jam or curd, and applying simple decorations. (2h)
  • Recipe Adaptation and Quality Evaluation — Learners modify a basic muffin recipe to be gluten-free or vegan, bake the adapted batch, and conduct a sensory evaluation against the standard recipe. (1h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
