Course Outline

Day 1: Foundations of Cold Chain Management

Objectives:
• Understand the principles and importance of cold chain management in wholesale and retail.
• Identify key components and stakeholders in the cold chain.
• Recognize temperature-sensitive products and their storage requirements.
• Explain the impact of cold chain failures on product quality and safety.

Topics:
• Introduction to cold chain management: definition, scope, and relevance.
• Regulatory framework: SAQA unit standards, food safety regulations, and industry best practices.
• Temperature-sensitive products: perishable foods, pharmaceuticals, and other goods.
• Cold chain stakeholders: suppliers, transporters, warehouse operators, retailers.
• Basic principles of temperature control: monitoring, recording, and corrective actions.
• Consequences of cold chain breaches: spoilage, financial loss, and health risks.
• Overview of cold chain equipment: refrigerated vehicles, cold rooms, display fridges.
• Case studies: real-world examples of cold chain failures and successes.

Day 2: Operational Management and Monitoring

Objectives:
• Develop skills in temperature monitoring and data logging.
• Implement standard operating procedures for cold chain operations.
• Manage inventory and stock rotation in cold storage.
• Identify and mitigate risks in the cold chain.

Topics:
• Temperature monitoring devices: thermometers, data loggers, and IoT sensors.
• Standard operating procedures (SOPs) for receiving, storing, and dispatching.
• Inventory management: FIFO, FEFO, and stock rotation for temperature-sensitive goods.
• Cold storage best practices: stacking, airflow, and temperature mapping.
• Risk assessment: identifying critical control points (CCPs) in the cold chain.
• Hazard analysis and critical control points (HACCP) principles.
• Corrective actions for temperature deviations: quarantine, rework, disposal.
• Documentation and record-keeping: temperature logs, incident reports.

Day 3: Advanced Applications and Practical Integration

Objectives:
• Evaluate cold chain performance using key performance indicators.
• Apply continuous improvement techniques to enhance cold chain efficiency.
• Integrate cold chain management with overall supply chain strategy.
• Prepare for audit and compliance requirements.

Topics:
• Key performance indicators (KPIs): temperature compliance, waste reduction, energy efficiency.
• Continuous improvement: root cause analysis, corrective and preventive actions (CAPA).
• Sustainability in cold chain: energy-efficient equipment, green refrigerants.
• Technology trends: blockchain for traceability, AI for predictive maintenance.
• Cold chain audits: internal and external audit preparation.
• Integration with supply chain: demand planning, transportation, and reverse logistics.
• Cost management: balancing quality and cost in cold chain operations.
• Future challenges: climate change, regulatory updates, and consumer expectations.

Practicals

8 hours of practicals To be conducted online or on-campus or in-house
Overview

Hands-on practical sessions allow learners to apply cold chain principles in simulated scenarios, including temperature monitoring, equipment operation, and corrective actions. These exercises reinforce theoretical knowledge and build competence in real-world cold chain management.

Practical Activities
  • Practical 1: Temperature Monitoring and Data Logging — Learners use thermometers and data loggers to measure and record temperatures in a simulated cold storage environment. (2h)
  • Practical 2: Cold Storage Operations and Stock Rotation — Learners practice proper stacking, airflow management, and FIFO/FEFO stock rotation in a mock cold room. (2h)
  • Practical 3: Cold Chain Risk Assessment and HACCP — Learners conduct a risk assessment on a simulated cold chain scenario and develop a HACCP plan for a critical control point. (2h)
  • Practical 4: Cold Chain Audit Simulation — Learners participate in a mock audit, reviewing documentation and inspecting cold chain processes against compliance standards. (2h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

All marks are recorded on the AATICD LMS and visible to each learner under their account.

Certificate

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).

  • If you scored under 50% you can sit the final test again at the next scheduled session at no extra cost.
