This course equips learners with the skills to implement and maintain a food safety culture within a food-handling environment. It covers the principles of food safety management systems, monitoring procedures, and corrective actions to ensure compliance with regulatory standards.

This course is designed for food safety team members, supervisors, and managers responsible for implementing and maintaining food safety practices in food manufacturing, catering, or retail settings.

Course Outline

Day 1: Foundations of Food Culture

Objectives:
• Understand the concept of food culture and its importance in food safety and quality.
• Identify key elements that shape a positive food culture within an organisation.
• Recognise the role of leadership and employee engagement in fostering food culture.
• Describe the relationship between food culture and regulatory compliance.

Topics:
• Introduction to food culture: definition and significance.
• Core values, beliefs, and behaviours influencing food safety.
• Organisational culture vs. food safety culture.
• Leadership commitment and its impact on culture.
• Employee roles and responsibilities in maintaining culture.
• Overview of relevant SAQA standards and unit standards.
• Case studies: successful food culture implementations.
• Group discussion: current challenges in food culture.

Day 2: Implementation Strategies

Objectives:
• Develop a step-by-step plan for implementing food culture initiatives.
• Apply communication and training techniques to embed food culture.
• Use tools for monitoring and measuring food culture maturity.
• Identify barriers to implementation and strategies to overcome them.

Topics:
• Steps to implement a food culture programme.
• Communication strategies for cultural change.
• Training and competency development for all staff.
• Behavioural observation and feedback systems.
• Key performance indicators for food culture.
• Tools for assessing food culture maturity (e.g., surveys, audits).
• Addressing resistance and sustaining momentum.
• Group activity: designing an implementation plan.

Day 3: Maintenance and Continuous Improvement

Objectives:
• Establish procedures for ongoing maintenance of food culture.
• Integrate food culture into existing quality management systems.
• Apply continuous improvement methodologies to enhance culture.
• Evaluate effectiveness and report on food culture outcomes.

Topics:
• Maintenance procedures: reviews, refreshers, and updates.
• Embedding food culture into daily operations.
• Integration with HACCP, ISO 22000, and other standards.
• Continuous improvement: PDCA cycle and root cause analysis.
• Incident investigation and learning from failures.
• Reporting and communicating culture metrics to stakeholders.
• Case study: maintaining culture during organisational change.
• Final assessment and action planning.

This course is made up of exercises and case studies delivered alongside the theory — no separate practical sessions are required to complete it.

Summatives

Each delegate is assessed continuously throughout the course and a final summative test at the end.

Daily Exercises — 30%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 30% to the final total.

Final Test — 70%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 70% to the overall mark.

All marks are recorded on the AATICD LMS and visible to each learner under their account.

Certificate

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Daily Average 30% + Final Test 70%).
