This course provides learners with the knowledge and skills required to implement good agricultural practices (GAP) for the production of export-quality perishable produce. It covers the principles of quality assurance, traceability, and compliance with international market standards, enabling learners to contribute to the competitiveness of South African agricultural exports.

Target Audience

Farm managers, agricultural advisors, quality controllers, and production supervisors involved in the cultivation, handling, and export of perishable produce such as fruits, vegetables, and cut flowers.

Prerequisites

None — open enrollment. However, learners should have basic literacy and numeracy skills to engage with course materials.

Course Outline

Day 1: Introduction to Good Agricultural Practices and Export Requirements

Objectives:
• Understand the scope and importance of GAP in export horticulture
• Identify key export market requirements and regulatory frameworks
• Recognize the role of GAP in food safety and quality assurance
• Outline the principles of traceability and documentation

Topics:
• What is GAP and why it matters for export
• Overview of GlobalGAP, SIZA, and other certification schemes
• South African export regulations and market access requirements
• Introduction to food safety hazards (biological, chemical, physical)
• Principles of traceability from farm to fork
• Documentation basics: records, logs, and audit trails
• Roles and responsibilities of farm workers and management

Day 2: Food Safety and Hygiene Management

Objectives:
• Identify food safety hazards in fresh produce production
• Implement personal hygiene and sanitation protocols
• Understand cross-contamination risks and control measures
• Apply cleaning and disinfection procedures for equipment and facilities

Topics:
• Types of food safety hazards: microbial, chemical, physical
• Personal hygiene standards for farm workers
• Sanitary facility requirements (toilets, handwashing stations)
• Cleaning schedules and procedures for packing areas
• Pest control in production and storage areas
• Water quality testing and management
• Allergen management and prevention of cross-contact

Day 3: Pre-Harvest Practices for Quality Produce

Objectives:
• Select appropriate cultivars and planting materials for export
• Manage soil health and irrigation for optimal quality
• Apply integrated pest management (IPM) strategies
• Record pre-harvest treatments and inputs accurately

Topics:
• Soil testing and fertility management
• Irrigation scheduling and water conservation
• Integrated pest management: monitoring, thresholds, and biological control
• Safe use of agrochemicals: selection, mixing, and application
• Pre-harvest intervals and maximum residue limits (MRLs)
• Nutrient management and foliar feeding
• Record keeping for field operations

Day 4: Harvesting and Field Handling Techniques

Objectives:
• Apply proper harvesting methods to minimize damage
• Manage field hygiene and worker training for harvest
• Implement cooling and shade protocols post-harvest
• Ensure traceability during field collection

Topics:
• Harvest maturity indices for different crops
• Harvesting tools and techniques to reduce bruising
• Field packing and container management
• Immediate cooling methods (shade, forced air, hydro-cooling)
• Field hygiene: clean containers, worker sanitation
• Traceability tags and batch coding
• Training harvest crews on quality standards

Day 5: Post-Harvest Handling, Packing, and Cold Chain Management

Objectives:
• Operate packing line equipment correctly
• Implement temperature management and cold chain protocols
• Grade and sort produce according to export standards
• Apply packaging materials and labeling requirements

Topics:
• Packing line layout and flow: washing, sorting, grading
• Temperature management: pre-cooling, cold storage, refrigerated transport
• Relative humidity and ethylene control
• Grading standards: size, colour, blemishes, uniformity
• Packaging materials: cartons, trays, liners, and ventilation
• Labeling: product, batch, country of origin, bar codes
• Cold chain monitoring: data loggers and temperature records

Day 6: Quality Control, Traceability, and Internal Auditing

Objectives:
• Conduct quality inspections and defect identification
• Maintain traceability records throughout the supply chain
• Perform internal audits and corrective actions
• Prepare for third-party certification audits

Topics:
• Quality parameters: appearance, texture, taste, shelf life
• Sampling plans for export consignments
• Traceability systems: batch numbers, lot tracking, recall procedures
• Internal audit checklists and frequency
• Non-conformance reports and root cause analysis
• Corrective and preventive actions (CAPA)
• Mock recall exercises

Day 7: Certification, Compliance, and Continuous Improvement

Objectives:
• Understand certification processes for GlobalGAP, SIZA, etc.
• Compile documentation for audit readiness
• Develop a continuous improvement plan for GAP
• Apply GAP principles to a case study

Topics:
• Certification bodies and audit processes
• Documentation review: SOPs, records, registers
• Legal compliance: labour, environmental, food safety laws
• Continuous improvement: plan-do-check-act (PDCA) cycle
• Case study: real-world GAP implementation challenges
• Final assessment and course wrap-up
• Action plan for farm implementation

Practicals

Overview

Hands-on practical sessions are essential for learners to apply GAP principles in realistic farm and packhouse scenarios. These sessions reinforce theoretical knowledge through direct experience in harvesting, packing, cold chain monitoring, and internal auditing.

Practical Activities
  • Harvesting and Field Handling Simulation — Learners practice proper harvesting techniques for selected crops, including use of tools, field packing, and immediate cooling. They also complete traceability documentation. (5h)
  • Packing Line Operation and Quality Grading — Learners operate a simulated packing line: washing, sorting, grading, and packing produce according to export standards. They also practice labeling and cold chain setup. (6h)
  • Water Quality Testing and Sanitation Procedures — Learners collect water samples, perform basic tests (pH, chlorine, microbial indicators), and conduct cleaning and disinfection of surfaces and equipment. (4h)
  • Internal Audit and Traceability Mock Recall — Learners conduct an internal audit using a checklist, identify non-conformances, and simulate a product recall using traceability records. (6h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
