Day 3: Massecuite Preparation and Pan Feeding

Objectives:

• Explain pan feeding strategies
• Calculate required syrup and seed quantities

• Types of massecuite: A, B, C, and affination
• Seed preparation and footing formation
• Continuous vs. batch feeding
• Material balance calculations

Day 4: Pan Boiling Process Control

• Monitor and adjust boiling conditions
• Identify common process disturbances

Day 5: Striking, Discharge, and Crystallizer Operations

Overview

Hands-on practical sessions are essential for learners to apply theoretical concepts to real pan boiling operations. These sessions develop skills in process control, quality testing, and troubleshooting under simulated and actual factory conditions.

Practical Activities
  • Practical 1: Pan Operation and Process Control — Learners operate a pilot-scale vacuum pan, adjusting steam, vacuum, and feed rates to maintain target brix and temperature profiles. (12h)
  • Practical 2: Quality Testing and Analysis — Learners perform laboratory tests on massecuite and sugar samples to assess purity, brix, grain size, and color. (10h)
  • Practical 3: Troubleshooting and Problem Solving — Using a simulator, learners diagnose and resolve common pan boiling issues such as false grain, slow boiling, and high molasses purity. (10h)
  • Practical 4: Energy Optimization and Yield Calculation — Learners conduct an energy audit on a simulated pan station and calculate yield improvements from proposed changes. (8h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
