Description

This course equips learners with the knowledge and practical skills to transfer and blend unmatured and matured grain and malt distillates in a distillery environment. Participants will understand the sensory characteristics, blending techniques, and quality control measures required to produce consistent, high-quality spirits.

Course Outline

Day 1: Fundamentals of Grain Malt Distillates and Blending Principles

Objectives:
• Understand the chemical and sensory differences between matured and unmatured grain malt distillates.
• Identify key factors affecting maturation, including wood type, toast level, and time.
• Describe the principles of blending for consistency and quality.
• Explain the role of water and proofing in blending.
• Recognise regulatory requirements and labelling standards for blended distillates.

• Overview of grain malt distillate production: from mash to new make spirit.
• Maturation process: interaction with oak, extraction of compounds, and chemical changes.
• Sensory characteristics of matured vs. unmatured distillates.
• Blending objectives: balancing flavour, aroma, colour, and mouthfeel.
• Types of blends: vatted, blended malt, and single grain variations.
• Impact of water quality and dilution on final product.
• Regulatory framework: SAQA standards, labelling, and excise regulations.
• Introduction to blending equipment and hygiene practices.

Day 2: Practical Blending Techniques and Sensory Evaluation

Objectives:
• Apply sensory evaluation methods to assess individual distillates.
• Develop a blending recipe using matured and unmatured components.
• Perform small-scale blending trials and adjust for target profile.
• Understand the importance of batch consistency and record-keeping.
• Identify common off-flavours and corrective blending strategies.

• Sensory analysis: taste, aroma, colour, and mouthfeel evaluation.
• Designing a blend: setting target profiles and selecting components.
• Calculation of blend ratios: volume, alcohol content, and flavour contribution.
• Hands-on blending exercise: mixing samples and assessing results.
• Adjusting blends: addition of unmatured spirit, water, or caramel.
• Documentation: blending logs, batch numbers, and traceability.
• Common defects in distillates and how blending can mitigate them.
• Quality control checks: alcohol strength, colour, and clarity.

Day 3: Advanced Blending Strategies and Commercial Application

Objectives:
• Optimise blends for cost, availability, and market preferences.
• Scale up from laboratory to production batches.
• Implement quality assurance protocols for blended products.
• Understand the business aspects: inventory management and ageing stock.
• Prepare for certification and compliance audits.

Topics:
• Advanced blending: using statistical process control and historical data.
• Scaling recipes: converting small trial volumes to bulk production.
• Managing inventory of matured and unmatured stocks.
• Blending for product launches: market trends and consumer preferences.
• Quality assurance: sensory panels, chemical testing, and shelf-life.
• Compliance with SAQA unit standard 259282 and other regulations.
• Troubleshooting blend issues: rework and corrections.
• Final assessment: create a blend and present with documentation.

Overview

Practical sessions are integral to this course, enabling learners to apply blending theory through hands-on exercises. Learners will conduct sensory evaluations, formulate blends, and perform scale-up trials, reinforcing the skills needed for commercial production.

Practical Activities
  • Sensory Evaluation of Distillates — Learners taste and evaluate matured and unmatured grain malt distillates, recording sensory profiles. (3h)
  • Small-Scale Blending Trials — Learners design and prepare small blends using given components, adjusting ratios to meet a target profile. (4h)
  • Scale-Up and Quality Control — Learners scale a successful small blend to a larger batch and perform quality checks including alcohol strength and clarity. (3h)
  • Final Blend Presentation — Learners present their final blend with documentation, including recipe, sensory notes, and quality results. (2h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
