Course Outline

Day 1: Introduction to Raw Materials and Cane Sugar

Objectives:
• Understand the role of raw materials in beverage distillation
• Identify different types of cane sugar and their properties
• Explain the sugar extraction and processing methods
• Describe the impact of sugar quality on fermentation

Topics:
• Overview of beverage distillation and raw material significance
• Types of cane sugar: raw, refined, molasses, and syrups
• Sugar composition: sucrose, glucose, fructose, and impurities
• Harvesting and milling of sugarcane
• Juice extraction, clarification, and concentration
• Sugar crystallization and by-products
• Storage and handling of sugar for distilling
• Quality parameters: brix, purity, and colour

Day 2: Fruit Raw Materials and Their Preparation

Objectives:
• Identify suitable fruit types for beverage distillation
• Understand fruit composition and its effect on flavour
• Describe fruit processing: washing, crushing, and pressing
• Explain the importance of fruit ripeness and variety

Topics:
• Common fruits for distilling: grapes, apples, pears, stone fruits
• Fruit chemistry: sugars, acids, tannins, and aromatics
• Harvesting and post-harvest handling
• Fruit preparation: destemming, crushing, and maceration
• Juice extraction methods: pressing and centrifugation
• Enzymatic treatment and clarification
• Preservation and storage of fruit musts
• Quality control: acidity, sugar content, and microbial load

Day 3: Fermentation and Practical Integration

Objectives:
• Apply knowledge of raw materials to fermentation planning
• Understand yeast selection and fermentation conditions
• Evaluate the impact of raw materials on spirit character
• Integrate practical skills in raw material handling and fermentation

Topics:
• Fermentation fundamentals: yeast metabolism and sugar conversion
• Yeast strains for cane sugar vs. fruit fermentation
• Fermentation parameters: temperature, pH, and nutrients
• Monitoring fermentation progress: brix, alcohol, and by-products
• Troubleshooting common fermentation issues
• Influence of raw materials on final spirit profile
• Blending and aging considerations
• Regulatory and quality standards for raw materials

Practicals

10 hours of practicals To be conducted online or on-campus or in-house
Overview

Hands-on practicals allow learners to apply theoretical knowledge to real raw materials. Learners will process cane sugar and fruit samples, prepare fermentation media, and monitor fermentation, developing essential skills for beverage distillation.

Practical Activities
  • Practical 1: Raw Material Inspection and Preparation — Learners inspect and grade samples of cane sugar (raw, refined, molasses) and fruits (grapes, apples). They perform brix measurement, pH testing, and prepare fruit musts by crushing and pressing. (3h)
  • Practical 2: Fermentation Setup and Monitoring — Learners set up fermentation trials using cane sugar and fruit musts. They inoculate with yeast, monitor temperature, brix, and alcohol content over time, and record observations. (4h)
  • Practical 3: Sensory Evaluation and Troubleshooting — Learners evaluate fermented samples for aroma, taste, and clarity. They diagnose common off-flavours and defects, and propose corrective actions based on raw material quality. (3h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
