Day 1: Introduction to Confectionery Decoration

Objectives:
• Understand the scope of confectionery decoration in professional baking
• Identify key tools, equipment, and ingredients
• Recognise hygiene and safety standards
• Explain the role of decoration in product presentation

• Overview of confectionery decoration techniques
• Tools and equipment: piping bags, tips, spatulas, turntables
• Ingredients: icings, fondant, ganache, food colours
• Hygiene and safety in the decorating workspace
• Quality standards for finished products
• Basic design principles: colour, balance, texture

Day 2: Fundamentals of Piping Techniques

Objectives:
• Demonstrate correct handling of piping bags and tips
• Execute basic piping shapes: stars, rosettes, shells
• Control pressure and flow for consistent results
• Apply piping to simple bases

• Types of piping tips and their uses
• Filling and holding a piping bag
• Basic piping exercises: dots, lines, stars
• Shell borders and rosettes
• Writing and lettering with icing
• Practice on parchment paper

Day 3: Buttercream Basics and Applications

Objectives:
• Prepare stable buttercream icing
• Achieve smooth crumb coating
• Apply simple buttercream decorations
• Troubleshoot common buttercream issues

• Buttercream recipes: American, Swiss, Italian
• Achieving correct consistency
• Crumb coating a cake
• Smooth icing application with spatula
• Simple buttercream borders and swirls
• Colour mixing for buttercream

Day 4: Royal Icing Techniques

Objectives:
• Prepare royal icing to correct consistency
• Execute flooding and piping techniques
• Create simple royal icing decorations
• Store royal icing properly

• Stiff, medium, and thin consistencies
• Flooding technique for cookies
• Piping details: dots, lines, filigree
• Royal icing flowers: basic petals

Day 5: Fondant and Sugar Paste Fundamentals

Objectives:
• Knead and colour fondant correctly
• Roll and cover a cake with fondant
• Create simple fondant cut-outs and shapes
• Identify common fondant problems and solutions

• Types of fondant: rolled, poured, marshmallow
• Kneading and colouring techniques
• Rolling fondant to even thickness
• Covering a cake smoothly
• Fondant cut-outs using cutters
• Basic fondant modelling: balls, ropes, ribbons

Day 6: Ganache Preparation and Decoration

Objectives:
• Prepare dark, milk, and white ganache
• Achieve correct pouring and spreading consistency
• Create glossy ganache drip effects
• Use ganache for filling and coating

• Ganache ratios and types
• Melting and emulsifying techniques
• Pouring ganache over cakes
• Drip effect on chilled cakes
• Ganache as a filling
• Ganache truffles and glazes

Day 7: Piping Flowers and Advanced Borders

Objectives:
• Pipe realistic flowers: roses, daisies, leaves
• Create advanced border patterns
• Combine multiple piping techniques
• Assess flower quality

• Piping daisies and leaves

Day 8: Sugar Art: Pulled and Blown Sugar

• Understand sugar cooking stages
• Pull and shape sugar for decorations
• Create simple pulled sugar flowers
• Handle hot sugar safely

• Isomalt as alternative
• Pulling sugar technique

Day 9: Chocolate Tempering and Decorations

Objectives:
• Temper chocolate correctly using seeding method
• Create chocolate curls, shards, and moulds
• Use chocolate transfer sheets
• Store tempered chocolate items

• Seeding method for tempering
• Testing temper: sheen and snap

Day 10: Marzipan and Modelling Chocolate

Objectives:
• Prepare and colour marzipan
• Model simple marzipan fruits and figures
• Work with modelling chocolate
• Combine marzipan with other mediums

Day 11: Advanced Fondant Modelling and Sculpting

Day 14: Sugar Flowers and Botanicals

Day 15: Modern Trends: Mirror Glaze and Geode Cakes

• Prepare mirror glaze with correct viscosity
• Apply mirror glaze for smooth finish
• Create geode effect with rock candy
• Combine trends in one cake

• Glaze application over frozen cake

Day 16: Production Planning and Efficiency

• Plan decoration workflow for multiple orders
• Estimate time and material costs
• Implement batch production techniques
• Maintain quality under time pressure

Day 17: Final Project and Assessment

• Design and execute a complete decorated cake

Practicals

68 hours of practicals To be conducted online or on-campus or in-house
Overview

Practical sessions are integral, comprising 50% of the course. Learners will develop hands-on skills in piping, icing, fondant work, chocolate tempering, sugar art, and final cake assembly through supervised practice. Each session builds proficiency and confidence in real-world decorating scenarios.

Practical Activities
  • Practical 1: Piping and Buttercream Basics — Learners practice piping techniques on parchment and dummy cakes, then prepare and apply buttercream to a single-layer cake, including crumb coating and simple borders. (12h)
  • Practical 2: Fondant Coverage and Royal Icing — Learners cover a cake with fondant, create cut-out decorations, and practice royal icing flooding and piping on cookies and small cakes. (14h)
  • Practical 3: Chocolate and Sugar Art — Learners temper chocolate, make curls and moulds, and create pulled sugar ribbons and a small sugar flower. Safety protocols are emphasised. (14h)
  • Practical 4: Advanced Decorating Techniques — Learners pipe a rose on a flower nail, create a marzipan fruit, and use an airbrush to apply a gradient on a fondant-covered cake. (14h)
  • Practical 5: Final Project Execution — Learners design and decorate a tiered celebration cake incorporating at least three techniques (e.g., fondant, piping, chocolate work). The cake is presented and evaluated. (14h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
