This course equips learners with the knowledge and skills to ferment raw products for beverage distilling purposes. It covers the principles of fermentation, selection of raw materials, and monitoring of the fermentation process to ensure quality and consistency. Upon completion, learners will be able to apply fermentation techniques in a distilling environment.

Course Outline

Day 1: Introduction to Fermentation for Distilling

Objectives:
• Explain the principles of fermentation and its role in distilling
• Identify key microorganisms involved in alcoholic fermentation
• Describe the chemical reactions converting sugars to ethanol
• Outline safety protocols for handling fermenting materials
• Recognise different raw materials suitable for fermentation

• Biochemistry of fermentation: sugars to ethanol
• Yeast and other microorganisms: selection and roles
• Raw materials: grains, fruits, molasses, and tubers
• Hygiene and safety in fermentation operations
• Introduction to fermentation vessels and equipment

Day 2: Raw Material Selection and Preparation

Objectives:
• Evaluate raw materials based on sugar content and quality
• Demonstrate proper milling, mashing, and crushing techniques
• Apply methods to extract fermentable sugars
• Adjust pH and nutrient levels for optimal yeast activity
• Prevent contamination during preparation

• Grain types: barley, maize, rye, wheat – characteristics
• Fruit and molasses: sugar profiles and handling
• Milling and mashing processes for starches
• Enzymatic conversion: alpha-amylase and glucoamylase
• pH adjustment and nutrient supplementation
• Water quality and its impact on fermentation
• Pre-treatment methods to reduce spoilage

Day 3: Yeast Management and Fermentation Start

Objectives:
• Select appropriate yeast strains for different raw materials
• Rehydrate and propagate yeast cultures correctly
• Pitch yeast at optimal rate and temperature
• Monitor initial fermentation parameters
• Troubleshoot common start-up issues

• Yeast strains: distillers, wine, and specialty yeasts

• Aeration and oxygen requirements

Day 4: Fermentation Monitoring and Control

• Track fermentation progress using analytical tools
• Control temperature, pH, and nutrient levels
• Identify and correct deviations in fermentation
• Manage foam and prevent contamination
• Document fermentation data for quality assurance

• Measuring specific gravity, Brix, and alcohol content
• Temperature control methods: cooling jackets, ambient
• pH monitoring and adjustment
• Nutrient additions: DAP, vitamins, and minerals
• Foam management and antifoam agents
• Contamination detection: lactic acid, acetic acid bacteria
• Record-keeping and batch tracking

Day 5: Completion of Fermentation and Wash Analysis

Objectives:
• Determine fermentation endpoint using analytical methods
• Assess wash quality: alcohol yield, acidity, volatiles
• Perform settling and clarification techniques
• Prepare wash for distillation
• Evaluate factors affecting fermentation efficiency

• Signs of fermentation completion: gravity, temperature
• Analytical testing: alcohol by volume, residual sugars
• Acidity and volatile acidity measurement
• Clarification: settling, centrifugation, filtration
• Wash stability and storage before distillation
• Yield calculation and efficiency analysis

Day 6: Troubleshooting and Optimisation

Objectives:
• Diagnose common fermentation problems
• Implement corrective actions for stuck or slow ferments
• Optimise fermentation parameters for higher yield
• Reduce production of undesirable congeners
• Apply strategies for consistent batch quality

• Stuck fermentation: causes and remedies
• High temperature stress and yeast health
• Nutrient deficiency and supplementation strategies
• Reducing methanol, fusel oils, and acetaldehyde
• Optimising sugar-to-ethanol conversion
• Scaling up from laboratory to production
• Case studies of common fermentation faults

Day 7: Quality Assurance, Safety, and Practical Integration

Objectives:
• Implement quality control checks throughout fermentation
• Apply safety procedures for handling chemicals and equipment
• Integrate fermentation knowledge with distilling operations
• Develop a fermentation plan for a specific raw material
• Review course outcomes and assessment

• Quality assurance protocols: sampling, testing, records
• Safety: PPE, chemical handling, emergency procedures
• Linking fermentation to distillation: impact on spirit character
• Fermentation planning: recipe development for grains/fruits

Overview

Hands-on practical sessions allow learners to apply fermentation theory by preparing raw materials, managing yeast, monitoring fermentations, and troubleshooting real batches. These supervised exercises develop essential skills in process control, hygiene, and quality assessment.

Practical Activities
  • Raw Material Preparation and Mashing — Learners mill grains, prepare mash, and perform enzymatic conversion to produce fermentable wort. (5h)
  • Yeast Handling and Fermentation Initiation — Learners rehydrate dry yeast, prepare starter cultures, and pitch yeast into wort, monitoring initial parameters. (4h)
  • Fermentation Monitoring and Data Collection — Over two days, learners monitor ongoing fermentations, record data, and adjust conditions as needed. (6h)
  • Wash Analysis and Troubleshooting — Learners analyse finished wash for alcohol, acidity, and off-flavours, and diagnose any fermentation issues. (4h)
  • Fermentation Planning and Integration with Distilling — Learners design a fermentation plan for a given raw material and discuss integration with distillation operations. (2h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
