Description

This course equips learners with the practical skills and theoretical knowledge required to produce high-quality mash for grain distillate production. Participants will learn to select and mill grains, control mashing parameters, and monitor fermentation to ensure consistent alcohol yield and flavour profile.

Course Outline

Day 1: Foundations of Grain Mash Production

Objectives:
• Understand the principles of grain selection and mashing for distillate production
• Identify key ingredients and their roles in mash composition
• Describe the mashing process and its critical parameters
• Recognize safety and hygiene requirements in a production environment

Topics:
• Overview of distillate production from grain
• Grain types: maize, barley, wheat, sorghum – characteristics and selection
• Enzymes and their role in starch conversion
• Water quality and its impact on mash
• Mashing process: mixing, heating, and resting stages
• Temperature control and pH management
• Safety protocols: handling hot liquids, chemicals, and equipment
• Hygiene and sanitation in mash production

Day 2: Mashing Techniques and Process Control

Objectives:
• Apply different mashing methods for various grain types
• Monitor and adjust process parameters to optimize yield
• Troubleshoot common mashing problems
• Understand fermentation preparation and yeast management

Topics:
• Step mashing vs. infusion mashing
• Cereal cooking and adjunct handling
• Measuring and controlling mash thickness and viscosity
• Starch conversion testing (iodine test)
• Lautering and sparging techniques
• Cooling and transferring mash to fermenter
• Yeast selection, rehydration, and pitching
• Common issues: stuck mash, low conversion, contamination

Day 3: Practical Integration and Quality Assurance

Objectives:
• Execute a complete mash production process from grain to fermentable wort
• Perform quality checks and adjustments in real time
• Apply record-keeping and traceability procedures
• Evaluate final wort characteristics for fermentation readiness

Topics:
• Hands-on mashing: scaling recipes and operating equipment
• Real-time monitoring: temperature, pH, gravity
• Adjustments: adding enzymes, acid, or water
• Wort clarification and cooling
• Measuring original gravity and yield
• Documentation: batch records and SOPs
• Cleaning-in-place (CIP) procedures
• Troubleshooting practical scenarios

Overview

The practicals are essential for learners to apply theoretical knowledge in a controlled production environment. They cover the full mashing process from grain handling to wort collection, ensuring competency in equipment operation, process control, and safety.

Practical Activities
  • Grain Handling and Milling — Learners select and mill grains to appropriate particle size for mashing. (2h)
  • Mash Preparation and Cooking — Learners prepare mash by mixing grains with water, heating, and holding at specific temperatures. (4h)
  • Lautering and Wort Collection — Learners separate liquid wort from spent grains and collect for fermentation. (3h)
  • Cooling, Yeast Pitching, and Cleanup — Learners cool wort, pitch yeast, and perform cleaning-in-place procedures. (3h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
