This course equips learners with the skills and knowledge required to operate a grape destalking and crushing plant in a winery or juice production facility. Course Outline

Day 1: Introduction to Grape Destalking and Crushing

Objectives:
• Understand the principles of grape destalking and crushing in wine production
• Identify the main components and functions of destalking and crushing equipment
• Demonstrate knowledge of safety protocols and hygiene standards
• Explain the impact of destalking and crushing on wine quality

Topics:
• Overview of the winemaking process and the role of destalking and crushing
• Anatomy of a grape: stems, skins, pulp, and seeds
• Types of destalking and crushing machines: centrifugal, roller, and combined units
• Key components: destemmer cage, crusher rollers, must pump, and controls
• Safety procedures: lockout/tagout, PPE, emergency stops
• Hygiene and cleaning protocols for equipment
• Factors affecting must quality: temperature, speed, and adjustment settings

Day 2: Operation and Adjustment of Destalking and Crushing Equipment

Objectives:
• Operate destalking and crushing plant according to standard operating procedures
• Adjust machine settings for different grape varieties and desired must characteristics
• Monitor and control process parameters to optimise efficiency
• Perform routine checks and minor adjustments during operation

Topics:
• Pre-start checks: inspection of belts, bearings, and guards
• Starting and stopping sequences
• Setting destemmer speed and crusher gap for white vs. red grapes
• Adjusting for overripe or underripe fruit
• Monitoring throughput and must quality
• Troubleshooting common issues: blockages, excessive stems, seed damage
• Recording operational data and quality observations

Day 3: Maintenance, Quality Control, and Practical Integration

Objectives:
• Perform basic cleaning and maintenance tasks on destalking and crushing equipment
• Apply quality control checks on must and stems
• Identify and respond to equipment faults and safety hazards
• Integrate theoretical knowledge into a simulated production scenario

Topics:
• Daily cleaning procedures: flushing, sanitising, and inspection
• Lubrication and replacement of wear parts
• Quality control: assessing stem removal efficiency, berry breakage, and seed integrity
• Fault diagnosis: unusual noises, vibrations, and performance deviations
• Emergency procedures: spills, mechanical failure, and fire
• Documentation and reporting: logbooks and shift handover
• Simulated practical assessment: operate plant from start to finish

Overview

Learners will gain hands-on experience operating a destalking and crushing plant under supervision. Practical sessions cover machine setup, adjustment for different grape types, cleaning, and basic troubleshooting to reinforce theoretical knowledge.

Practical Activities
  • Equipment Familiarisation and Pre-Start Checks — Learners identify major components, perform pre-start checks, and practise lockout/tagout procedures. (2h)
  • Operation and Adjustment for White Grapes — Learners operate the plant with white grapes, adjusting destemmer speed and crusher gap to achieve optimal must quality. (3h)
  • Operation and Adjustment for Red Grapes — Learners operate the plant with red grapes, adjusting settings to accommodate different berry firmness and stem condition. (3h)
  • Cleaning, Maintenance, and Fault Response — Learners perform end-of-day cleaning, basic maintenance (lubrication, inspection), and respond to simulated faults. (2h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
