Course Outline

Day 1: Introduction to Grape Juice Fermentation

Objectives:
• Understand the principles of alcoholic fermentation in winemaking
• Identify key grape varieties and their juice characteristics
• Explain the role of yeast in fermentation
• Recognize the importance of hygiene and sanitation in the cellar

• Overview of winemaking process
• Grape composition and juice extraction
• Fermentation chemistry: sugar to alcohol
• Yeast types and selection
• Fermentation vessels and equipment
• Hygiene and sanitation protocols
• Safety considerations in the cellar
• Introduction to quality control parameters

Day 2: Pre-Fermentation Practices and Must Preparation

Objectives:
• Describe pre-fermentation treatments for grape must
• Explain the purpose of sulfur dioxide addition
• Demonstrate correct procedures for must adjustments
• Understand the impact of temperature on fermentation initiation

Topics:
• Must analysis: Brix, pH, titratable acidity
• Sulfur dioxide: role, addition rates, and safety
• Acid adjustments and deacidification
• Sugar additions (chaptalization) if needed
• Enzyme additions for clarification
• Cold soaking techniques
• Inoculation procedures for yeast
• Temperature management before fermentation

Day 3: Alcoholic Fermentation Management

Objectives:
• Monitor fermentation progress using density and temperature
• Control fermentation temperature for desired wine style
• Identify and troubleshoot common fermentation problems
• Apply nutrient additions to yeast

• Fermentation kinetics: lag, exponential, stationary phases
• Temperature control methods (cooling, heating)
• Yeast nutrition: nitrogen, vitamins, oxygen
• Nutrient addition timing and rates
• Cap management for red wines (punch-down, pump-over)
• Fermentation monitoring tools: hydrometer, thermometer, data loggers
• Stuck fermentation causes and remedies
• Volatile acidity and off-flavour prevention

Day 4: Post-Fermentation Processes and Clarification

Objectives:
• Explain the steps after fermentation completion
• Perform racking and determine appropriate timing
• Describe fining agents and their applications
• Understand cold stabilization and tartrate management

Topics:
• Determining fermentation completion (dryness)
• Racking: purpose, procedure, and equipment
• Lees contact and batonnage
• Fining agents: bentonite, gelatin, egg whites, etc.
• Fining trials and dose calculations
• Cold stabilization for tartrate removal
• Filtration methods: depth, cross-flow
• Centrifugation and its role

Day 5: Maturation, Blending, and Aging

Objectives:
• Differentiate between stainless steel and barrel aging
• Describe the impact of oak on wine character
• Apply blending principles to create balanced wines
• Monitor wine stability during aging

Topics:
• Maturation vessel choices: steel, concrete, oak
• Oak types, toast levels, and flavour contributions
• Barrel maintenance and topping up
• Sulfur dioxide management during aging
• Blending trials and sensory evaluation
• Micro-oxygenation techniques
• Lees aging and autolysis
• Monitoring free SO2, pH, and volatile acidity

Day 6: Quality Control and Laboratory Analysis

Objectives:
• Perform routine laboratory tests on fermenting juice
• Interpret analytical results to make adjustments
• Identify microbiological spoilage organisms
• Understand legal requirements for wine composition

• Laboratory safety and equipment
• Measurement of Brix, pH, TA, and alcohol
• Free and total SO2 analysis (Ripper method)
• Yeast and bacteria enumeration (microscopy)
• Malolactic fermentation monitoring (paper chromatography)
• Volatile acidity determination
• Sensory evaluation and fault identification
• Legal limits and labelling requirements

Day 7: Practical Integration and Course Review

Objectives:
• Synthesize all steps from must to finished wine
• Troubleshoot a simulated fermentation scenario
• Develop a fermentation plan for a specific wine style
• Prepare for unit standard assessment

Overview

Hands-on practical sessions are essential for learners to apply fermentation theory in a cellar environment. These sessions develop competence in must analysis, fermentation monitoring, racking, fining, and laboratory testing, ensuring learners can manage real-world winemaking processes safely and effectively.

Practical Activities
  • Must Preparation and Analysis — Learners prepare grape must by measuring Brix, pH, and TA, then make adjustments with acid or sugar. They also add sulfur dioxide and inoculate with yeast. (6h)
  • Fermentation Monitoring and Temperature Control — Learners monitor active fermentations over two days, taking density and temperature readings, and adjusting cooling or heating systems as needed. (8h)
  • Racking, Fining, and Cold Stabilization — Learners rack wine off lees, conduct fining trials with bentonite, and set up a cold stabilization test for tartrate removal. (6h)
  • Laboratory Analysis and Quality Control — Learners perform SO2, volatile acidity, and alcohol analysis using standard laboratory methods, and interpret results for quality control. (4h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
