Day 1: Introduction to Pastry and Confectionery Basics

Objectives:
• Understand the scope and outcomes of the course.
• Identify key ingredients and their functions in pastry making.
• Explain basic hygiene and safety practices in a bakery.
• Describe the principles of dough mixing and gluten development.

• Course overview and unit standard 114217 alignment
• Types of pastry: shortcrust, puff, choux, filo
• Ingredients: flour types, fats, liquids, leavening agents
• Hygiene and food safety standards (HACCP)
• Equipment identification and usage
• Basic mixing methods: rubbing-in, creaming, lamination

Day 2: Short Pastry Fundamentals

Objectives:
• Describe the characteristics of short pastry.
• Demonstrate the rubbing-in method for short pastry.
• Explain the role of fat and liquid ratios.
• Identify common faults and remedies.

Topics:
• Short pastry: definition and uses (tarts, pies, quiches)
• Ingredient proportions and temperature control
• Rubbing-in technique: achieving breadcrumb consistency
• Adding liquid: binding without overworking
• Resting and chilling: purpose and timing
• Common faults: shrinkage, toughness, sogginess

Day 3: Short Pastry Applications

Objectives:
• Prepare sweet and savoury short pastry bases.
• Line tart tins and pie dishes correctly.
• Blind bake pastry with proper technique.
• Fill and finish short pastry products.

• Sweet shortcrust: sugar and egg additions
• Savoury shortcrust: cheese, herbs, spices
• Lining techniques: fluting, docking, weights
• Blind baking: methods and timing
• Fillings: fruit, custard, savoury mixtures
• Finishing: glazing, crimping, decorating

Day 4: Puff Pastry Theory and Lamination

Objectives:
• Explain the lamination process for puff pastry.
• Identify the types of puff pastry (full, half, rough).
• Describe the importance of dough and butter consistency.
• Demonstrate correct folding and turning techniques.

• Puff pastry: structure and rise principle
• Ingredients: bread flour, butter, water, salt
• Détrempe preparation: mixing and resting
• Butter block preparation: shaping and chilling
• Lamination: envelope method, turns (single, double)
• Resting between turns: why and how long

Day 5: Puff Pastry Shapes and Products

Objectives:
• Shape and cut puff pastry into standard forms.
• Prepare classic puff pastry items.
• Control oven temperature for proper lift.
• Troubleshoot common puff pastry issues.

• Cutting: straight cuts, crimped edges, decorative shapes
• Classic items: palmiers, vol-au-vents, mille-feuille
• Fillings: cream, fruit, savoury
• Egg wash application for colour
• Baking: high heat initial, then reduce
• Troubleshooting: insufficient rise, butter leakage, uneven layers

Day 6: Advanced Puff Pastry Techniques

Objectives:
• Create rough puff pastry and quick methods.
• Produce filled and shaped puff pastry specialties.
• Understand commercial production considerations.
• Apply finishing techniques for presentation.

• Rough puff pastry: method and uses
• Puff pastry turnovers, sausage rolls, and pasties
• Cream horns and choux-puff combinations
• Commercial shortcuts: pre-rolled, frozen
• Finishing: glazes, icing, dusting
• Storage and shelf life of puff pastry products

Day 7: Confectionery Elements and Sauces

Objectives:
• Prepare basic confectionery components.
• Make crème pâtissière and other fillings.
• Produce simple sugar syrups and glazes.
• Combine pastry with confectionery elements.

• Confectionery basics: custards, creams, curds
• Crème pâtissière: technique and variations
• Fruit fillings: compotes, jams, fresh fruit
• Sugar syrups: simple, flavoured
• Glazes: apricot, chocolate, mirror
• Assembly: layering and finishing

Day 8: Quality Control and Production Planning

Objectives:
• Implement quality checks for pastry products.
• Plan production batches efficiently.
• Apply costing and yield calculations.
• Identify waste reduction strategies.

• Yield testing: weight, volume, waste
• Batch production: scaling recipes, timing
• Costing: ingredient cost, labour, overhead
• Waste management: reuse, composting, donation
• Record keeping: production logs, HACCP records

Day 9: Integration and Assessment

Objectives:
• Produce a range of short pastry and puff pastry items.
• Demonstrate all skills in a timed practical assessment.
• Complete theoretical assessment on principles.
• Reflect on learning and career pathways.

Overview

Hands-on practicals form the core of this course, allowing learners to apply theoretical knowledge in a real bakery environment. Under supervision, learners will prepare, shape, bake, and finish a variety of short pastry and puff pastry products, developing essential skills in dough handling, lamination, and quality control.

Practical Activities
  • Basic Dough Preparation and Short Pastry — Learners prepare short pastry from scratch, practice rubbing-in, lining tins, blind baking, and making filled tarts and pies. (8h)
  • Puff Pastry Lamination and Shaping — Learners prepare puff pastry dough, laminate with butter, perform turns, and shape into classic items like palmiers, vol-au-vents, and mille-feuille. (12h)
  • Confectionery Fillings and Assembly — Learners prepare crème pâtissière, fruit fillings, and glazes, then assemble and finish pastries for presentation. (8h)
  • Integrated Production and Assessment — Learners produce a complete range of short pastry and puff pastry items under timed conditions, followed by quality evaluation and feedback. (8h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
