Description

This course equips learners with the practical skills and theoretical knowledge required to perform wine transfer and blending operations in a cellar environment. Participants will learn to manage wine movements between vessels, assess wine characteristics for blending, and ensure quality control throughout the process. The course is aligned with the SAQA unit standard 259162 and focuses on safe, efficient, and compliant wine handling practices.

Course Outline

Day 1: Foundations of Wine Transfer and Blending

Objectives:
• Understand the principles and importance of wine transfer and blending in winemaking
• Identify equipment and safety procedures for wine transfer
• Explain the sensory and chemical factors influencing blending decisions
• Describe the regulatory and quality standards for blended wines

Topics:
• Overview of wine transfer methods: racking, pumping, and gravity flow
• Equipment: pumps, hoses, tanks, and fittings
• Safety protocols: cleaning, sanitisation, and handling
• Principles of blending: balance, complexity, and consistency
• Sensory evaluation: taste, aroma, and colour assessment
• Chemical analysis: alcohol, acidity, tannins, and residual sugar
• Regulatory requirements: labelling and composition standards
• Quality control: sampling and record-keeping

Day 2: Practical Transfer Techniques and Blending Trials

Objectives:
• Perform wine transfer operations using standard equipment
• Conduct blending trials to achieve desired sensory profile
• Calculate blend ratios and adjust chemical parameters
• Troubleshoot common transfer issues (e.g., oxidation, sediment pickup)

Topics:
• Setting up transfer systems: hose connections and pump calibration
• Racking: separating wine from lees with minimal aeration
• Blending trial methodology: bench trials and small-scale testing
• Using laboratory data to guide blending: acid, sugar, and tannin adjustments
• Evaluating blend stability: cold and heat testing
• Documenting transfer and blending processes
• Cleaning and maintenance of transfer equipment

Day 3: Advanced Blending Strategies and Quality Assurance

Objectives:
• Develop blending strategies for large-scale production
• Apply sensory and chemical data to optimise blends
• Implement quality assurance protocols for final blends
• Plan and supervise a complete transfer and blending operation

Topics:
• Scale-up from bench trials to tank blends
• Blending for consistency across vintages
• Managing oxidative and reductive handling during transfer
• Fining and filtration prior to blending
• Final blend approval: sensory panel and analytical checks
• Record-keeping and traceability for certification
• Cost considerations and inventory management
• Case studies of successful blended wines

Practicals

Overview

Hands-on practicals are essential to develop competence in wine transfer and blending. Learners will operate equipment, conduct blending trials, and apply quality control procedures under supervision.

Practical Activities
  • Wine Transfer Operations — Learners set up and perform racking and pumping operations using winery equipment, focusing on technique and safety. (4h)
  • Blending Trials and Sensory Evaluation — Learners conduct bench blending trials, calculate blend ratios, and evaluate sensory attributes to achieve a target profile. (4h)
  • Final Blend Preparation and Quality Check — Learners scale up a selected blend, perform transfer to blending tank, and conduct quality assurance tests. (4h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
