Prerequisites

None — open enrollment. However, learners should have basic literacy and numeracy skills.

Course Outline

Day 1: Fundamentals of Wort Production

Objectives:
• Understand the role of wort in beer fermentation
• Identify key raw materials: malt, adjuncts, hops, and water
• Describe the mashing process and its objectives
• Explain the principles of lautering and sparging
• Recognise the importance of wort composition for fermentation

Topics:
• Overview of the brewing process and wort production
• Raw materials: malt types, adjuncts, hops, and water chemistry
• Mashing: enzymes, temperature rests, and conversion
• Lautering and sparging techniques
• Wort boiling: hop addition and isomerisation
• Wort clarification and cooling
• Importance of wort pH, gravity, and nutrient profile

Day 2: Wort Production Processes and Control

Objectives:
• Outline the steps in wort production from milling to cooling
• Calculate brewhouse efficiency and extract yield
• Apply quality control parameters for wort
• Troubleshoot common issues in wort production
• Understand the impact of process variables on wort quality

Topics:
• Milling: types and effect on extract
• Mashing programmes: infusion, decoction, and step mashing
• Lautering: bed formation, run-off, and sparging optimisation
• Wort boiling: time, temperature, and hop utilisation
• Whirlpool and trub separation
• Wort cooling and aeration
• Quality control: pH, gravity, colour, bitterness, and clarity
• Process calculations: extract, efficiency, and losses

Day 3: Advanced Wort Production and Integration

Objectives:
• Design a wort production schedule for a specific beer style
• Evaluate the effect of wort composition on fermentation performance
• Apply hygiene and safety protocols in wort production
• Integrate wort production with downstream fermentation
• Analyse and interpret wort analysis data

Topics:
• Wort production for different beer styles (lager, ale, stout)
• Adjunct handling and cereal mashing
• High-gravity brewing considerations
• Wort oxygen management and yeast health
• Cleaning and sanitation in wort production
• Safety: hot liquids, steam, and confined spaces
• Data interpretation: wort analysis and corrective actions
• Integration with fermentation: pitching rate and fermentation profile

Practicals

12 hours of practicals To be conducted online or on-campus or in-house
Overview

Hands-on practical sessions are essential to develop competence in wort production. Learners will operate pilot-scale brewing equipment, perform mashing and lautering, and conduct wort quality tests under supervision.

Practical Activities
  • Milling and Mashing — Learners mill malt, prepare mash water, and perform a step mash using a pilot brewhouse. (3h)
  • Lautering and Sparging — Learners lauter the mash, sparge, and collect wort while monitoring run-off clarity and gravity. (3h)
  • Wort Boiling and Cooling — Learners boil wort with hop additions, whirlpool, and cool using a plate heat exchanger. (3h)
  • Wort Quality Analysis — Learners analyse wort samples for pH, gravity, colour, bitterness, and clarity using laboratory instruments. (3h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
