Course Outline

Day 1: Fundamentals of Yeast Fermentation and Micro Baking

Objectives:
• Understand the role of yeast in fermentation and bread making.
• Identify different types of yeast and their characteristics.
• Explain the basic principles of micro baking.
• Describe the key ingredients and their functions in yeast-fermented products.
• Recognize common faults in yeast-fermented products and their causes.

Topics:
• Introduction to yeast: types (fresh, dry, instant) and storage.
• Fermentation process: how yeast works, temperature, time, and pH.
• Micro baking principles: small-scale production, equipment, and hygiene.
• Ingredients: flour types, water, salt, sugar, fats, and enrichments.
• Mixing methods: straight dough, sponge and dough.
• Dough development: gluten formation and windowpane test.
• Fermentation stages: bulk fermentation, knocking back, and proofing.
• Common faults: under/over-proofing, crust issues, and internal defects.

Day 2: Techniques and Variations in Yeast Fermented Products

Objectives:
• Demonstrate different shaping and scoring techniques.
• Compare lean and rich dough formulations.
• Apply time and temperature management for consistent results.
• Evaluate the impact of preferments on flavour and texture.
• Troubleshoot fermentation issues through sensory evaluation.

Topics:
• Dough handling: dividing, rounding, benching, and shaping.
• Scoring patterns: purpose and techniques for different products.
• Lean doughs: French baguette, ciabatta, and sourdough basics.
• Rich doughs: brioche, challah, and sweet doughs.
• Preferments: poolish, biga, and sourdough starter maintenance.
• Retarding and cold fermentation methods.
• Baking process: oven loading, steam injection, and temperature profiling.
• Quality assessment: crumb structure, crust colour, and flavour profile.

Day 3: Advanced Applications and Quality Control in Micro Baking

Objectives:
• Formulate recipes for specialty yeast products.
• Implement quality control procedures in micro baking.
• Adapt recipes for dietary requirements (e.g., gluten-free, low sugar).
• Analyse cost and production efficiency for small-scale operations.
• Develop a production plan for a micro bakery.

Topics:
• Specialty products: artisan loaves, rolls, and flatbreads.
• Enriched doughs: using fats, eggs, and dairy for premium products.
• Dietary adaptations: gluten-free yeast products, sugar substitutes.
• Scaling recipes for small batch production.
• Quality control: temperature logs, weight checks, and sensory evaluation.
• Shelf life and staling: causes and prevention strategies.
• Production planning: scheduling, ingredient management, and waste reduction.
• Hygiene and safety: HACCP principles for micro bakeries.

Overview

Hands-on practical sessions are integral to this course, allowing learners to apply fermentation principles, mixing techniques, and baking skills in a micro-bakery setting. Learners will produce a variety of yeast-fermented products, troubleshoot dough issues, and implement quality control measures.

Practical Activities
  • Basic Dough Preparation and Fermentation — Learners mix, knead, and ferment a straight dough for white bread, monitoring temperature and time. (4h)
  • Shaping and Scoring Techniques — Learners shape various products (baguettes, rolls, loaves) and apply scoring patterns before baking. (3h)
  • Rich Dough and Preferments — Learners prepare a brioche dough and a sourdough starter, comparing fermentation behaviour. (3h)
  • Quality Control and Troubleshooting — Learners evaluate baked products for defects, record data, and suggest improvements. (2h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
