Description

The purpose of this course is to equip learners with the knowledge and skills required to handle perishable cargo safely and efficiently in accordance with industry standards and regulatory requirements. Learners will understand the specific handling, storage, and documentation procedures for perishable goods to maintain product integrity and minimize losses.

Target Audience

This course is designed for logistics personnel, warehouse operators, freight handlers, and supervisors involved in the transportation and storage of perishable goods in the supply chain industry.

Course Outline

Day 1: Introduction to Perishable Cargo and Regulatory Framework

Objectives:
• Define perishable cargo and its key characteristics
• Identify the main types of perishable goods and their handling requirements
• Explain the regulatory framework including SAQA and international standards
• Describe the roles and responsibilities of personnel in the supply chain
• Understand the consequences of improper handling on cargo quality and safety

Topics:
• What is perishable cargo? Types and examples (fresh produce, dairy, meat, seafood, pharmaceuticals)
• Temperature-controlled supply chain basics: cold chain integrity
• Regulatory bodies and standards: SAQA, PPECB, HACCP, ATP, IATA Perishable Cargo Regulations
• Documentation: certificates of origin, health certificates, temperature logs
• Roles: shipper, carrier, freight forwarder, receiver, quality control
• Consequences of temperature abuse: spoilage, safety risks, financial loss

Day 2: Handling Procedures and Equipment

Objectives:
• Describe proper handling procedures for loading and unloading perishable cargo
• Identify and use appropriate temperature monitoring equipment
• Explain pre-cooling, ventilation, and humidity control requirements
• Apply correct packing and stacking techniques for different cargo types
• Recognize signs of damage or spoilage during handling

Topics:
• Pre-handling checks: inspection of containers, reefer units, and temperature settings
• Loading procedures: airflow considerations, blocking and bracing, mixed cargo compatibility
• Temperature monitoring: data loggers, thermometers, real-time tracking systems
• Ventilation and humidity control for fresh produce and flowers
• Handling of frozen, chilled, and controlled atmosphere cargo
• Unloading procedures: dock procedures, rapid transfer, inspection protocols
• Common handling errors and how to avoid them

Day 3: Risk Management, Emergency Procedures, and Practical Integration

Objectives:
• Identify potential risks in the perishable cargo supply chain
• Implement corrective actions for temperature deviations and equipment failures
• Apply emergency procedures for cargo contamination or spoilage
• Conduct a mock handling operation demonstrating end-to-end compliance
• Evaluate handling performance and propose improvements

Topics:
• Risk assessment: hazard analysis, critical control points (HACCP) in cold chain
• Contingency planning: reefer breakdown, power outages, flight delays
• Emergency procedures: product quarantine, reconditioning, disposal
• Incident reporting and root cause analysis
• Quality assurance: audits, inspections, and continuous improvement
• Case studies of perishable cargo incidents and lessons learned
• Integration of all procedures in a simulated handling scenario

Overview

Practical sessions allow learners to apply theoretical knowledge in realistic handling scenarios, using temperature monitoring equipment, reefer containers, and proper loading techniques. These hands-on exercises build competence in maintaining cold chain integrity and responding to emergencies.

Practical Activities
  • Pre-handling Inspection and Temperature Monitoring — Learners inspect a reefer container, verify temperature set points, and use data loggers to record ambient and product temperatures. They identify discrepancies and document findings. (3h)
  • Loading and Stacking of Perishable Cargo — Learners load mixed perishable cargo (e.g., fresh fruit and frozen meat) into a reefer container, applying correct stacking, airflow spacing, and segregation techniques. They then unload and inspect for damage. (4h)
  • Emergency Response Simulation — In a simulated scenario (reefer failure, temperature deviation), learners implement emergency procedures: isolate affected cargo, initiate corrective cooling, document incident, and communicate with stakeholders. (3h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

All marks are recorded on the AATICD LMS and visible to each learner under their account.

Certificate

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
