Day 1: Introduction to Poultry Processing and Abattoir Hygiene

Objectives:
• Understand the importance of hygiene in poultry processing.
• Identify key stakeholders and regulatory bodies in South Africa.
• Explain the consequences of poor hygiene on product quality and public health.

• Overview of the poultry processing industry in South Africa.
• Introduction to abattoir hygiene principles.
• Role of SAQA and related quality assurance bodies.
• Basic microbiology relevant to poultry.
• Overview of Unit Standard 119389.

Day 2: Regulatory Framework and Standards

Objectives:
• Describe the Meat Safety Act and related regulations.
• Identify relevant SANS codes and standards.
• Explain the role of the Department of Agriculture, Land Reform and Rural Development.

Topics:
• Meat Safety Act (Act 40 of 2000) and regulations.
• SANS 10049 and other applicable standards.
• Import/export requirements and certification.
• Role of the Agricultural Product Standards Act.
• Understanding HACCP principles in the regulatory context.

Day 3: Personal Hygiene and Protective Clothing

Objectives:
• Demonstrate proper handwashing and personal hygiene practices.
• Select appropriate personal protective equipment (PPE).
• Understand the importance of health screening and exclusion policies.

Topics:
• Handwashing techniques and frequency.
• PPE requirements: aprons, gloves, hairnets, boots.
• Health and hygiene policies for workers.
• Managing cuts, wounds, and illnesses.
• Visitor hygiene protocols.

Day 4: Abattoir Design and Workflow

Objectives:
• Explain the principles of hygienic abattoir design.
• Describe the workflow from receiving to dispatch.
• Identify critical control points in the layout.

• Zoning: clean vs. dirty areas.
• Airflow and drainage considerations.
• Equipment placement and material flow.
• Separation of live bird handling and processing.

Day 5: Cleaning and Sanitation Procedures

Objectives:
• Describe cleaning and disinfection protocols.
• Select appropriate cleaning agents and disinfectants.
• Understand the concept of biofilms and their removal.

• Cleaning schedules and methods (CIP, COP).
• Types of cleaning agents: detergents, acids, alkalis.
• Disinfectants: chlorine, quaternary ammonium compounds.
• Biofilm formation and control.
• Verification of cleaning effectiveness (ATP testing).

Day 6: Pest Control and Waste Management

Objectives:
• Identify common pests in poultry abattoirs.
• Implement integrated pest management (IPM) strategies.
• Describe waste handling and disposal methods.

• Common pests: flies, rodents, birds.
• IPM principles: monitoring, exclusion, control.
• Waste categories: offal, feathers, blood.
• Waste storage and disposal regulations.
• Rendering and by-product handling.

Day 7: Water Quality and Supply

• Understand water quality standards for processing.
• Describe water treatment and monitoring methods.
• Identify sources of water contamination.

• Water sampling and testing protocols.

Day 8: Receiving and Ante-Mortem Inspection

• Describe ante-mortem inspection procedures.
• Identify signs of disease and stress in live birds.
• Implement biosecurity measures at receiving.

• Ante-mortem inspection: visual and physical.
• Signs of common poultry diseases.

Day 9: Slaughter and Processing Hygiene

• Explain hygienic slaughter techniques.
• Identify critical hygiene points during evisceration.
• Prevent cross-contamination during processing.

• Stunning, bleeding, scalding, defeathering.
• Evisceration: organ removal and inspection.
• Chilling methods: air vs. immersion.
• Hygiene during portioning and packing.
• Temperature control and monitoring.

Day 10: Post-Mortem Inspection and Quality Control

• Describe post-mortem inspection procedures.
• Identify carcass defects and condemnations.
• Implement quality control checks.

• Common conditions: bruises, abscesses, tumors.
• Condemnation criteria and recording.

Day 11: Record Keeping and Traceability

• Implement traceability systems from farm to fork.

Day 12: Integration and Practical Assessment

Objectives:
• Apply all hygiene principles in a simulated scenario.
• Demonstrate proper cleaning and inspection techniques.
• Complete a comprehensive knowledge assessment.

• Practical simulation: abattoir hygiene walkthrough.
• Hands-on cleaning and disinfection exercise.
• Role-play: ante-mortem and post-mortem inspection.
• Review of key concepts and Q&A.
• Written and practical assessment.

This course is made up of exercises and case studies delivered alongside the theory — no separate practical sessions are required to complete it.

Summatives

Each delegate is assessed continuously throughout the course and a final summative test at the end.

Daily Exercises — 30%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 30% to the final total.

Final Test — 70%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 70% to the overall mark.

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Daily Average 30% + Final Test 70%).
