This course equips winery personnel with the practical skills and theoretical knowledge required to perform wine stabilisation procedures in a commercial cellar environment. Participants will learn to apply stabilisation techniques for tartrate, protein, and microbial stability, ensuring product quality and shelf-life. The course aligns with SAQA Unit Standard 259157 and focuses on safe, efficient, and compliant practices.

Target Audience

This course is designed for cellar workers, laboratory technicians, and production supervisors currently employed in wineries or wine production facilities who are responsible for or involved in wine stabilisation processes.

Prerequisites

None — open enrollment. However, learners should be employed in or have access to a winery environment for practical application.

Course Outline

Day 1: Principles of Wine Instability and Stabilisation

Objectives:
• Explain the causes of wine instability (tartrate, protein, microbiological, oxidative).
• Identify common wine defects related to instability.
• Describe the principles behind cold stabilisation and fining agents.
• Understand the role of SO2 and other additives in stabilisation.
• Outline the legal and quality requirements for stabilised wine.

• Overview of wine stability and instability.
• Tartrate instability: causes and detection.
• Protein instability and heat testing.
• Microbiological stability: spoilage organisms and prevention.
• Cold stabilisation: theory and process parameters.
• Fining agents: types (bentonite, gelatin, PVPP) and applications.
• Role of sulphur dioxide and antioxidants.
• Quality control tests for stability.

Day 2: Practical Stabilisation Techniques and Equipment

Objectives:
• Perform cold stabilisation trials and interpret results.
• Calculate correct dosages of fining agents.
• Operate stabilisation equipment (chillers, filtration systems).
• Conduct bench trials for fining and stabilisation.
• Troubleshoot common stabilisation problems.

• Cold stabilisation procedure: chilling, seeding, and monitoring.
• Fining trials: bentonite, gelatin, and isinglass.
• Membrane filtration and sterile filtration.
• Equipment: plate heat exchangers, cold stabilisation tanks, filter pads.
• Calculating additive dosages based on lab results.
• Troubleshooting haze, sediment, and re-fermentation.
• Record keeping and batch documentation.

Day 3: Advanced Stabilisation, Quality Assurance, and Integration

Objectives:
• Evaluate stabilisation protocols for different wine styles.
• Implement quality assurance checks for stabilised wine.
• Manage stabilisation in a production schedule.
• Apply corrective actions when stability tests fail.
• Integrate stabilisation procedures with overall winemaking workflow.

Topics:
• Advanced fining: crossflow filtration, electrodialysis.
• Stability testing protocols: cold test, heat test, bentonite requirement.
• Quality assurance: sensory evaluation, microbiological plating.
• Production planning: scheduling stabilisation with bottling.
• Corrective actions for failed stability tests.
• Environmental and safety considerations.
• Case studies: stabilisation challenges in different wine types.
• Integration with HACCP and cellar management.

Overview

Practical sessions are essential for learners to apply stabilisation theory in a real winery setting. Hands-on exercises include conducting cold stabilisation trials, fining bench tests, and operating stabilisation equipment under supervision.

Practical Activities
  • Cold Stabilisation Trial — Learners set up a cold stabilisation trial using a chiller and seeding with cream of tartar, monitor temperature and tartrate precipitation, and interpret results. (3h)
  • Fining Bench Trials — Learners prepare fining agent solutions, conduct bench trials on wine samples to determine optimal dosage, and evaluate clarity and stability. (3h)
  • Stability Testing and Quality Control — Learners perform heat and cold stability tests on stabilised wine samples, conduct microbiological plating, and assess results against quality standards. (3h)
  • Equipment Operation and Troubleshooting — Learners operate a plate heat exchanger and filter system, simulate common faults (e.g., blockage, temperature fluctuation), and apply corrective measures. (3h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
