Target Audience

This course is designed for entry-level to supervisory staff working in wholesale or retail operations, including sales assistants, stock controllers, and team leaders who need to understand the products they handle.

Course Outline

Day 1: Introduction to Wholesale and Retail Product Knowledge

Objectives:
• Understand the scope and structure of the wholesale and retail sector in South Africa.
• Identify key product categories and their characteristics.
• Explain the importance of product knowledge for operations.
• Describe the flow of goods from supplier to customer.

Topics:
• Overview of the wholesale and retail industry.
• Product categories: FMCG, durables, perishables, etc.
• Product life cycles and seasonality.
• Supply chain basics: procurement, warehousing, distribution.
• Role of product knowledge in customer service and sales.
• Legislation affecting product handling (e.g., Consumer Protection Act).

Day 2: Product Specifications and Quality Standards

Objectives:
• Interpret product specifications, labels, and packaging information.
• Apply quality standards and grading criteria.
• Identify common product defects and handling requirements.
• Understand storage and shelf-life requirements.

Topics:
• Reading and understanding product specifications.
• Labelling regulations and barcoding.
• Quality control: standards, inspections, and grading.
• Perishable vs non-perishable product handling.
• Storage conditions: temperature, humidity, stacking.
• Shelf-life management and rotation (FIFO/FEFO).
• Common product damages and prevention.

Day 3: Inventory Management and Stock Control

Objectives:
• Explain inventory management principles for wholesale and retail.
• Apply stock counting and reconciliation procedures.
• Use product knowledge to optimize stock levels.
• Identify fast-moving and slow-moving stock.

Topics:
• Inventory types: safety stock, cycle stock, seasonal stock.
• Stock counting methods: periodic, perpetual, cycle counts.
• Reorder levels, lead times, and economic order quantity.
• Product classification: ABC analysis.
• Using product data for demand forecasting.
• Handling returns, damaged goods, and write-offs.
• Technology in stock control: scanners, WMS.

Day 4: Product Handling, Safety, and Compliance

Objectives:
• Apply safe handling practices for various product types.
• Comply with health, safety, and environmental regulations.
• Manage hazardous materials and dangerous goods.
• Implement traceability and recall procedures.

Topics:
• Manual handling techniques and ergonomics.
• Safety data sheets (SDS) and hazardous product handling.
• Temperature-controlled supply chains (cold chain).
• Food safety standards (HACCP, FSSC 22000).
• Product traceability: batch numbers, expiry dates.
• Recall procedures and documentation.
• Waste management and sustainability practices.
• Personal protective equipment (PPE) requirements.

Day 5: Practical Integration and Assessment

Objectives:
• Synthesize product knowledge across operational functions.
• Solve real-world product-related problems.
• Demonstrate competence in product knowledge application.
• Prepare for unit standard assessment.

Topics:
• Case studies: product issues in receiving, storage, and dispatch.
• Role-play: customer queries and product recommendations.
• Problem-solving: stock discrepancies and quality complaints.
• Review of key concepts and question-and-answer session.
• Formative assessment: product knowledge quiz.
• Summative assessment preparation and practice.
• Feedback and action planning.

Practicals

16 hours of practicals To be conducted online or on-campus or in-house
Overview

Practical sessions allow learners to apply product knowledge in simulated wholesale and retail operations. They involve hands-on activities such as product identification, quality inspection, stock counting, and safe handling procedures.

Practical Activities
  • Product Identification and Specification Interpretation — Learners examine various products, interpret labels, barcodes, and specifications, and classify products by category and storage requirements. (4h)
  • Quality Inspection and Grading — Learners conduct quality checks on received goods, identify defects, and apply grading criteria for different product types. (4h)
  • Stock Counting and Reconciliation — Learners perform cycle counts, reconcile physical stock with system records, and investigate discrepancies. (4h)
  • Safe Handling and Storage Procedures — Learners practice manual handling techniques, use PPE, and set up storage areas according to product requirements including cold chain. (4h)

Summatives

Each delegate is assessed continuously throughout the course via daily exercises, scored practical assignments, and a final summative test at the end.

Practical Assignments — 30%

Practical assignments are observed and scored against a rubric during the practical sessions. Each delegate's practical mark is averaged into a single 100% score and contributes 30% to the final total.

Daily Exercises — 20%

Every training day ends with a multiple-choice exercise scored out of 100%. The scores from each daily exercise are averaged across the duration of the course to produce a Daily Average mark, which contributes 20% to the final total.

Final Test — 50%

On the last day a final summative test is written. It is a multiple-choice paper with multiple-answer questions: each question may have more than one correct option, and a single wrong selection on a question marks the entire question wrong — no partial credit. The final test is scored out of 100% and contributes 50% to the overall mark.

All marks are recorded on the AATICD LMS and visible to each learner under their account.

Certificate

Certificate of Completion

Awarded to delegates who achieve an overall mark of 50% or higher on the Final Total (Practicals 30% + Daily Average 20% + Final Test 50%).
